    for Rice:

    • 1 cup rice
    • 2 tablespoons oil
    • 1 3/4  cup water
    • 1/2  teaspoon salt

    for Seasoning:

    • 2 tablespoons oil
    • 1/2 teaspoon cumin seed
    • 1/2  teaspoon mustard seed
    • 1/2  teaspoon turmeric
    • 2 red whole red chili
    • 1 green chili sliced in four long way
    • 12 to 15 fresh curry leaves
    • 2 tablespoons chana dal, pre-soaked in water for at least half an hour
    • 1/4  cup unsalted roasted peanuts
    • 1 teaspoon salt adjust to taste
    • 1/4  cup lemon juice

    Instructions
     

    Method

    • Wash rice gently changing water several times until the water appears clear.
    • For fluffier rice, the rice should be soaked for at least 15 minutes prior to cooking.
    • Drain the rice and put it into the saucepan. Add water, oil, and salt, and bring to a boil. Once the water is boiling reduce the heat to low and cover the pan.
    • Cook about 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and fluff the rice with a fork.

    Preparing The Seasoning:

    • Heat the oil in a frying pan on medium heat; stir-fry the peanuts for about 2 minutes until peanuts changes the color to light brown.
    • Take out the peanuts from oil and use the same oil for rest of the seasoning.
    • Add cumin seeds and mustard seeds after seeds crack add red chili, curry leaves, and green chilies, and stir for a few seconds.
    • Add the chana dal, stir-fry for about a minute.
    • Add turmeric and mix it well.
    • Add the pre-cooked rice, peanuts and sprinkle salt and lemon juice over the rice.
    • Mix gently, making sure do not break the rice and stir-fry for about 2 minutes. Rice is ready, Enjoy!

    • 1 15 oz can of chickpea (chole, garbanzo)
    • 3 cups finely chopped spinach (palak)
    • 2 medium tomatoes chopped
    • 1/2" piece ginger (adrak)
    • 1 green chili
    • 3 tablespoon oil
    • 1/4 teaspoon asafetida (hing)
    • 1 teaspoon cumin seed (jeera)
    • 1 tablespoon coriander powder (dhania)
    • 1/2  teaspoon turmeric (haldi)
    • 1/2  teaspoon red pepper adjust to taste
    • 1/2  teaspoon salt adjust to taste
    • 1/2  teaspoon garam masala

    Instructions
     

    Method

    • Drain the chickpeas and rinse well.
    • Blend the tomatoes, green chilies, and ginger to make a puree.
    • Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil; if the seed cracks right away, the oil is ready. Add the asafetida and cumin seeds. When the cumin seeds crack, add the tomato puree, coriander powder, turmeric, and red chili powder. Cook for three to four minutes on medium heat. The tomato mixture will separate from the oil and reduce to about half in quantity.
    • Add spinach, salt, and one-half cup of water. Cook, covered, four to five minutes on medium heat.
    • Add the chickpeas and mash them lightly with a spatula. Add more water as needed to keep the gravy consistency to your liking. Cook on low heat for seven to eight minutes. Add the garam masala.

    • 1 bunch of asparagus approx. 1 pound
    • 2 Tbsp olive oil
    • 1 tsp cumin seed jeera
    • 1 Tbsp minced ginger
    • 2 tsp lemon juice
    • ½ tsp salt
    • ½ tsp black pepper

    Instructions
     

    • Holding the stalk at both ends, bend gently until it breaks on its own.  Discard the hard portion of the stalk.
    • Cut the remaining asparagus spears diagonally into 2 inch pieces.
    • Bring oil to medium heat in a large frying pan that can hold all the asparagus.
    • Add cumin seeds and wait till they crack. Then add asparagus, ginger, lemon juice, salt and black pepper.
    • Stir-fry for about 4 to 5 minutes until asparagus are tender but still crunch.
    • Serve hot or at room temperature.

    • Sprinkle shredded Parmesan cheese on cooked asparagus, just prior to serving. If the asparagus is warm enough, the cheese will melt and be delicious.

  • Taking Care Of New Moms

    As I mentioned before, my younger daughter-in-law is pregnant and is due at the end of January. Everyone in the family is very excited about the new baby!

    The postpartum period begins after the delivery of the baby and ends when the mother’s body has returned close to its pre-pregnant state.

    I am looking forward to taking care of my daughter-in-law and of course taking care of my future granddaughter! New moms deserve special attention to rebuild their strength after giving birth. Nutrition and plenty of rest are essential to new moms to help their bodies recover.

    Eating light, easy to digest food is important. Green vegetables, vegetables from the squash family, moong beans (dal), and whole-wheat bread are all good choices. Avoid cabbage, beans and lentils are considered harder to digest and create gas in the body. Also avoid anything sour, like tomatoes, tamarind, lemon, and oranges.

    I am compiling a list of remedies that will be useful after coming back from the hospital. My list is based on these traditional beliefs, which may help new moms below are some of the home remedies:

    1) Turmeric helps heal internal wounds – Take a half-teaspoon turmeric powder every day with lukewarm milk or water. Turmeric has many other health effects.

    2) Fenugreek seeds are great to help prevent and ease back and joint pain. Fenugreek seeds or fresh fenugreek are also taken to help nursing mothers increase their breast milk supply. Fenugreek is also available at many health food stores.

    3) Ajwain (carom seeds) helps soothe pain due to gas or indigestion. Every morning boil four glasses of water with two tablespoon of carom seeds (ajwain). Let it cool down to room temperature and drink this water throughout the day. Add ajwain as an ingredient when making roti or cooking vegetables.

    4) Dry ginger powder also known as sauth; take with food. Ginger offers health benefits, including anti-inflammation effects, and can also be found in health food stores.

    5) Gaund (or Gond) is an edible gum resin that is extracted from the bark of the tree. Gaund provides heat to our body and is usually eaten in cold winter months. Gaund and whole wheat ka ladoo is normally prepared for the nursing mother to help with lactation and provide nutrients for the baby. The main ingredients are whole-wheat flour, butter, nuts, gaund, poppy seeds, and sugar.

    6) Lastly, I will be making “Panjeere”, which is a mixture of nuts and a variety of ingredients. Panjeere and whole-wheat ladoos are a must for new moms. Stay tuned, as I will be posting both of these recipes in the near future.

    • Wash rice gently and soak it for at least 15 minutes prior to cooking.
    • After cooking rice expands to about three times in volume, so be sure to use the proper size pan. Drain the rice and put into the saucepan. Add the water, green peas, 1 teaspoon of oil, and salt, bring to a boil and turn the heat to low, and cover the pan.
    • Cook about 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and fluff the rice with a fork.
    • Heat the oil in a frying pan on medium high. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready. Add asafetida, cumin seeds, and mustard seeds. After the seeds crack, add red chilies, bay leaves, and cinnamon stick and stir-fry for few seconds.

    Ingredients
      

    • 1/2 lb paneer
    • 1 medium red bell pepper shimla mirch, capsicum
    • 1 medium green bell pepper shimla mirch, capsicum1
    • 3 tbsp oil
    • 3 medium tomatoes
    • 1/4 inch ginger
    • 1 green chili
    • 1/8 tsp asafetide hing
    • 1 tsp cumin seeds jeera
    • 1-1/2 tbsp coriander powder dhania
    • 1/2 tsp turmeric haldi
    • 1/2 tsp cayenne pepper
    • 2 tbsp chopped fenugreek leaves methi
    • 3/4 tsp salt

    Instructions
     

    • Cut paneer and bell peppers into ½ inch cubes.
    • Blend the tomatoes, ginger, and green chili to make a puree.
    • Heat the oil in frying pan on medium heat and stir fry paneer for about 2 minutes – take them out before paneer starts changing color.
    • Next stir-fry bell pepper until they are tender. Do not over cook the bell pepper. Take them out and drain on a paper towel.
    • Using the same frying pan, Test the oil by adding one cumin seed to the oil; if seed cracks right away oil is ready. Add the asafetida and cumin seeds.
    • After the cumin seeds crack, add the tomato puree, coriander powder, turmeric, fenugreek leaves and cayenne pepper. Cook for about 4 minutes on medium heat.
    • Tomato mixture will reduce to about half in volume. Add about 2 spoons of water, and the salt.
    • Wait till gravy comes to boil add paneer and bell pepper and let it simmer for about five minutes on low medium heat. Now it is ready to serve.

    • 1 ½ cup Peanuts or 1/2 pound shelled peanuts
    • ½ cup gram flour basen
    • ¼ cup rice flour
    • 1 Tbsp coriander powder dhania
    • ½ tsp turmeric haldi
    • 1 tsp red pepper
    • ½ tsp black pepper
    • 1 Tbsp green chili finely chopped
    • ¼ tsp ginger powder soth
    • 1 tsp salt adjust to taste
    • ½ tsp mango powder amchoor
    • tsp citric acid

    Also needed:

    • 1 cup Water as needed
    • Oil to fry

    Instructions
     

    • In a frying pan roast the dry peanuts on medium heat for 3-4 minutes and let it cool for few minutes.
    • Mix all the ingredients together in a large bowl.
    • Add water as needed making sure the spices and flour stick to the peanuts uniformly.
    • Heat the oil in a frying pan on medium heat.
    • The frying pan should have at least 1 inch of oil. To check if the oil is ready, put one drop of batter in the oil. The batter should raise to the top but not change color right away.
    • put few drops of oil in your hand it helps droping the penuts before putting peanuts on the oil.
    • While putting the peanuts into oil, loosen them with your fingers to make sure the peanuts are separated and do not form lumps. Peanuts should be separated while frying.
    • Fry the peanuts until they turn light brown, turning them occasionally.
    • When they are done cooking, take them out of the oil with a slotted spoon. Place them on a paper towel to absorb the extra oil.
    • After cooling to room temperature, the peanuts should be crispy.

    • Masala Peanuts can be stored for a month in an airtight container.

  • Diwali Festival

    We are getting ready for Diwali which is on Oct 28 this year.

    Diwali or Dipawali means “rows of lighted lamps” and the celebration is often referred to as the Festival of Lights. Behind the celebration of Diwali there are many myths. While preparing for Diwali, homes are cleaned and windows are opened to welcome Laksmi, the goddess of wealth. Candles and lamps are lit as a greeting to Her. Gifts are exchanged and festive meals are prepared. Diwali is celebrated with great sprit and enthusiasm all over India. The celebration is as important to Hindus as Christmas is to Christians.

    Starting on the 26th, for three days our family will have a family dinner and play cards. We have made a special menu for each day. Especially for Diwali day we will have a traditional dinner, spiced nuts, bread pakoras and samosa for appetizer. The main course will be puri filled with urad dal, kadhu khata meeta, aloo gobi, matar paneer, dahi vada, and cumin rice. For dessert we will have moong dal halwa, gulab jamun and ras malai.

    I designed the menu keeping in mind that each meal should be very traditional and include something special for every family member.

    To celebrate Diwali there will be many social gatherings. Our Mandir (Hindu church) will have a Diwali fair, and we will have a fundraiser at the fair. On the 28th there will be another Diwali function that I won’t attend but as a volunteer I will be making burfis. This event will be held in Balboa Park at the Museum of Art.

    I am also working on some new recipes:

    Sandesh:  This is a specialty from the state of Bengal.
    Sandesh is a delicacy, made several different ways using freshly made paneer. Sandesh is an exquisite dessert. If you pay attention to all the minor details, then it is easy to make. My version will probably be a little different from the original recipe, although I tried to keep it as original I could. I have experimented with the dish already but want to make it one more time before posting it at the website.

    Cabbage subji: this is easy and great for any meal. Again I have to make this maybe 2 more times just to get the right measurement for spices before posting at the website.

    • 4 cup French cut green beans or 16 oz frozen
    • 2 cup green peas or 6 oz frozen
    • 2 Tbsp oil
    • Pinch asafetida hing
    • 2 tsp cumin seed jeera
    • 5 red chilies lal mirch
    • 2 Tbsp washed urad dal
    • 2 tsp coriander powder dhania
    • ½ tsp turmeric haldi
    • 1 tsp salt adjust to taste
    • 1 Tbsp lemon juice adjust to taste

    Instructions
     

    • Heat the oil in a saucepan on medium-high heat. Test the heat by adding one cumin seed to the oil. If the cumin seed cracks right away, the oil is ready.
    • When the cumin seeds crack, add hing, red chilies and urad dal.
    • Stir-fry for half a minute, stop if the urad dal changes color.
    • Add green beans and peas, mix it well, and cover the pan. Turn down the heat to medium.
    • Let it cook for five to six minutes until the peas and beans are lightly tender. Do stir once in between.
    • Remove the cover and add the coriander powder, salt, and turmeric.
    • Let beans and peas cook without cover to allow the water to evaporate, this way the beans don’t become mushy. Stir the beans occasionally. Beans and peas should be lightly moist.
    • After turning of the heat add lemon juice.

    • Urad dal can be replaced with washed moong or chana dal.

    • 2 Tbsp coriander powder dhania

    • 1 medium chopped tomato for garnishing

    Instructions
     

    • Wash and soak the kidney beans in about six cups of water for at least 6 hours (the beans will double in volume ).
    • Cut the tomatoes in small pieces, green chili slice lengthwise and take out the seeds (if you prefer mild). Blend tomatoes, green chili, and ginger and make a paste.
    • Heat the oil in pressure cooker. Test the heat by adding one cumin seed. If the seed cracks right away, the oil is ready. Add asafetida and cumin seeds, as the cumin seeds crack add tomato paste, coriander, turmeric, chili powder, black pepper, and paprika.
    • Stir-fry for two to three minutes, until the oil begins to separate from the mixture. Add kidney beans, salt, and three cups of water. Close the cooker. Cook over medium high heat.
    • When pressure cooker starts to steam, turn the heat down to medium and cook twelve minutes.
    • Turn off the heat. Wait until the steam has stopped before opening the pressure cooker.
    • Kidney beans should be soft and tender. Stir and mash them gently. Adjust salt and pepper to taste.
    • Garnish with chopped tomatoes.
