    Jhaal muri is a popular street food snack of Kolkata. Jhaal means spices and muri is puffed rice. A long time ago, I visited my uncle in Kolkata and I still remember this mouthwatering snack. This puffed rice is tossed with potato, cucumber, tomatoes.  A special blend of spices including tamarind pulp, and mustard oil are also added to jhaal muri. This is a simple yet delicious snack.

    • 4 cups murmura/ muri (puffed rice)
    • 1/4 cup fine sev (bengal gram vermicelli)
    • 1/4 cup peanuts
    • 1 teaspoon oil
    • 1/2 cup potato boiled, peeled and cut into small pieces
    • 1/2 cup tomato finely chopped, seeded
    • 1/2 cup cucumber finely chopped
    • 2 tablespoons green chili, finely chopped, adjust to taste
    • 2 tablespoons cilantro finely chopped (hara dhania)
    • 1/4 cup tamarind paste
    • 4 teaspoons mustard oil

    Spice Mix

    • 4 teaspoons roasted cumin seeds powder
    • 1 teaspoon salt
    • 1 teaspoon black salt
    • 1 teaspoon mango powder (amchoor)
    • 1 teaspoon red chili powder
    • 1/2 teaspoon garam masala

    4 slices of lemon for garnishing

    Instructions
     

    How to make Bengali Jhaal Muri

    • Combine all the dry spices together. Set aside.
    • Heat a 1 teaspoon of oil in a small pan on medium heat, add peanuts and roast stirring continuously till lightly brown. This should take about 2 minutes. Set aside.
    • Dry roast the muri/puffed rice on medium heat for about 3 minutes. Notes: muri should not change color, they should be white but roasting gives freshness and make them crispy. Set aside.
    • Just before ready to serve jhaal muri add the peanuts, sev, tomato, potato, cucumber, green chili, cilantro, tamarind paste, mustard oil and spices. Toss them and serve.
    • You may adjust all the ingredients to your taste. Enjoy!

    Spicy chivda crunchy savory snack is quick and easy to make.  Chivda, also known as poha, is flattened rice that is flavored with spices. When I was growing up this was one of the snacks my mom will make, and we all will enjoy. I still enjoy this spicy chivda even today while watching TV. Store this in an airtight container and this chivda stays fresh and crunchy for 2 to 3 weeks.

    Ingredients
      

    • 2 cups thick chivda, poha
    • 2 tablespoons oil
    • 1 teaspoon mustard seeds (rai)
    • 1/2 teaspoon cumin seeds (jeera)
    • 1 tablespoon chopped green chili
    • 10 to 12 curry leaves
    • 2 red pepper dried broken in few pieces
    • 2 tablespoons peanuts
    • 2 tablespoons roasted chana
    • 2 tablespoons coconut dried sliced
    • 1/8 teaspoon asafetida (hing)
    • 1/4 teaspoon turmeric (haldi)
    • 1/2 teaspoon salt adjust to taste
    • 1/8 teaspoon citric acid (nimbu sat)
    • 1 teaspoon sugar

    Instructions
     

    • Roast the chivda in a microwave oven for one and half minutes, first do it for one minute take it out mix it well and put it back for another half minute. Set aside. Note: This gives a nice crunch to the chivda and save time. If it is roasted directly in frying pan it will takes more oil and will have to stir fry for about ten to fifteen minutes.
    • Heat the flat frying on medium heat, add the oil, oil should be moderately hot, add mustard seeds and cumin seeds as they start cracking lower the heat to low.
    • Add curry leaves and green chilies stir fry them for about a minute till the green chili and curry leaves stop splattering.
    • Next add peanuts and red chilies roast them for two minute until it start catching the color… do keep stirring
    • Time to add roasted chana, and coconut stir fry for another 30 seconds
    • Add asafetida, salt and turmeric stir for few seconds add chivda mix it well. Add sugar and citric acid keep stiring continuously for about 2 to 3 minutes. Why I am adding salt to the oil, this way all the chivda will be coated with salt evenly.
    • Chivda is ready turn off the heat while chivda is hot it will taste little chewy after it will cool of will become crunchy.

    This recipe is for Date and Nut Ladoo, or Candy as we call them at home. For my grand kids they are like candy and they love it. Adapted from my friend Renu’s recipe, when I tried this ladoo for the first time, I said WOW. I could not believe the main ingredient was only dates. That surprised me because I am not very fond of dates. This was the first time I have tasted date ladoos flavored with coco powder. This is a quick and easy recipe. Like me if you are using roasted nuts then there is a little or no cooking involved? This is a guilt free healthy snack (no sugar or butter added). Date ladoos are also vegan and gluten free. It's hard to eat just one!

    Ingredients
      

    • 1 cup dates pitted and chopped (khajoor)
    • 1-1/2 cups mixed nuts roasted and roughly chopped, I am using almonds, pistachios, cashews, and pecans
    • 2 tablespoons coco powder
    • 1/2 teaspoon instant coffee
    • Pinch of salt
    • 1/4 teaspoon oil to oil your palms

    Instructions
     

    • Soften the chopped dates in microwave for 30 seconds.
    • Blend the dates in the food processor until they become to the paste, this should take about 10 seconds, add coffee, coco, and salt blend it again until all the ingredients nicely incorporated about 10 seconds. Add the nuts to the food processor and blend it for about 15 seconds. Nuts should be still chunky.
    • Remove from food processor, oil your palm and knead the mix into dough, and divide them into 18 equal parts and roll them into ladoos.
    • Dates and nuts ladoos can be stored in air tight container for a month or more.

    Notes

    Notes: if you do not have roasted nuts dry roast them individually for about 3 minutes on medium heat and use your choice of nuts.

It is always amazing to see how a few simple ingredients can make such a satisfying dish. My husband who doesn't like eggplant fell in love with this dish. Dahi Baingan is simply delicious. This can be served with plain rice or roti.

    Ingredients
      

    • 1 eggplant cut into ¼ inch thick pieces this will make about 4 cups of cubed eggplant (baingan, brinjals)
    • 3 tablespoons oil
    • 1/2 teaspoon cumin seeds (jeera)
    • 1/8 teaspoon asafetida (hing)
    • 1 teaspoon ginger thinly sliced
    • 1 teaspoon salt adjust to taste
    • 1 cup yogurt
    • 2 teaspoons gram flour (besan)
    • 2 teaspoons coriander powder (dhania)
    • 1 teaspoon fennel seeds crushed (saunf)
    • 1 teaspoon red chili powder, adjust to taste
    • 1/8 teaspoon turmeric (haldi)
    • About 1/4 cup cilantro chopped

    Instructions
     

    • Whisk the yogurt besan, and cilantro together keep aside.
    • Heat the oil in a flat pan on medium high heat. When oil is moderately hot add cumin seeds as seeds crack add asafetida, ginger. Stir for about half a minute.
    • Add eggplant stir gently, spread them in the pan evenly. Sprinkle the salt over eggplant, do not mix. Cover the pan, lower the heat to medium low and let it cook for about 2-3 minutes.
    • Turn them over, some of the eggplants will have grilled charcoal color. Cover the pan and let it cook for another 2-3 minutes.
    • Check the eggplant they should be soft and tender add the remaining spices coriander, fennel seeds, and turmeric. Stir gently all the pieces of eggplants should be coated with spice mix. Add yogurt stir gently and let it cook for 2-3 minutes.

    Notes

    Notes: Adding the besan to the yogurt is essential as it prevents curdling the yogurt. Also give the thickness to the gravy.

    Besan sev is a popular savory crispy snack, which is made in almost every household in India. These noodle-like Sev are so tasty that when you start munching, it's often difficult to stop.  This is a quick and easy recipe. Besan Sev is a great snack to make in bulk as it stays fresh for months.  They are made on all festive occasions. How you serve these sev often depends on how thick sev are. Fine sev are used for garnishing chaat. Thicker sev are served alone as a snack.   My favorite way to serve sev drizzeled with cilantro chutney. To make sev you do need to use sev maker, which is a small gadget like for making noodles.

    Ingredients
      

    • 2 cups besan (gram flour)
    • 1 teaspoon carom seeds crushed (ajwain)
    • 1-1/2 salt
    • 1/2 teaspoon red chili powder, adjust to taste

    • 1/4 teaspoon asafetida (hing)
    • 3 tablespoons oil
    • 1/2 cup lukewarm water
    • Oil to fry

    Also need sev maker

    Instructions
     

    • Mix all the dry ingredients together, besan carom seeds, red chili, black pepper, and asafetida. Add the oil and mix it well.
    • Add the water slowly to make soft and smooth dough. Dough is very sticky, I used a spoon to mix the dough in the beginning. Then oil the palm and knead the dough. Cover the dough and allow to rest for about 15 minutes.
    • Greased sev maker with attachment. Place enough dough to fill the cylinder of sev maker and close. On other side, heat the oil in a frying pan on medium heat, frying pan should have about one inch of oil.
    • Oil should be moderately hot, Note: when you place little piece of dough oil should sizzle and dough should come up slowly without changing color.
    • Now hold the sev maker over frying pan, press the handle, sev will start coming out in to the oil. As sev is coming, slowly move the sev maker in circular motion.
    • As you complete one circle stop. Fry both sides till they become light golden brown, and oil will stop sizzling. Sev is ready. Remove it using slotted spoon.
    • Take them out over paper towel lined plate. And continue the same process for remaining dough.
    • Let the sev cool completely, as it cools they will become crispy. Break sev lightly with your hand and sev is ready to serve.

    • About 4 cups cubed potatoes, firmly boiled peeled and cut into bite size

    • 1/4 teaspoon black pepper
    • 1 teaspoons black salt
    • 1/8 teaspoon asafetida
    • 1/8 teaspoon citric acid
    • 1/2 teaspoon ginger powder (saunth)
    • 2 teaspoons sugar

    Instructions
     

    • To make spice mix all the spice mix together really well and set aside.
    • Heat heavy flat frying pan on medium high heat, add the oil in to warm frying pan. Place the cubed potatoes on the frying pan and sprinkle the salt over the potatoes.
    • Stir fry the potatoes; turn them occasionally until all sides are golden brown. This process should take 8-10 minutes.
    • Turn off the heat and sprinkle ginger, cilantro, green chilies, lemon juice and about 1-1/2 tablespoons of spice mix. Mix it well, making sure all the pieces of potatoes are coated.
    • Taste one of the potato and add more spice mix if needed according to your taste.

    Notes

    Note: This spice mix known as chaat masala can also be used to spice up any food. It especially tastes good when it is sprinkled over sliced cucumber and tomato or over pakoras. You can make the chaat masala in a larger quantity and keep it ready to go whenever you need it.

    Ingredients
      

    • 1 cup peanuts shelled unsalted raw
    • 1 cup sugar
    • 2 teaspoons of clarified butter or ghee
    • 1/4 teaspoon salt
    • 2 teaspoons ginger juice

    Instructions
     

    • Grease about 5×7 plate and set aside.
    • Dry roast the peanuts on medium heat stirring continuously for about 6 to 7 minutes until golden brown. Remove from pan, wait till they cool off rub between your palms and remove most of the skin. Lightly crush the peanuts.
    • In a heavy bottom sauce pan, over medium high heat melt the butter, then add sugar, ginger, and salt.
    • Keep stirring the sugar continuously till sugar start melting and changing the color to light brown. Turn off the heat as soon it comes to golden brown in color. Note: when sugar starts melting it changes the color very quickly and it can easily burn.
    • Add peanuts stir quickly. Pour over the greased plate and spread evenly.
    • Cool for a few minutes chikki should be warm, cut them in about 1-1/2 inch square.
    • Store them in air tight container

    Notes

     Note: To make the ginger juice grate the ginger using fine shredder and then press it between your fingers to yield the juice.

    • 2 cups cooked rice
    • 1 small potato peeled and cut in small pieces
    • 1 cup mixed vegetables cut into very small pieces (green beans, bell pepper and carrot)
    • 2 teaspoon ginger chopped
    • 1/2 teaspoon red chili powder, adjust to taste
    • 1-1/2 teaspoons salt
    • 1 teaspoon cumin seeds
    • 1 tablespoon corn starch
    • Oil to fry

    Instructions
     

    • Pat dry all the vegetables.
    • Put all the ingredients in food processer and mix for about half a minutes. Mix should not become like paste and you should be able to see all the vegetables.
    • Remove from the food processer, rice mix will be textured of chunky soft dough. Divide the mix into 16 pieces and roll them into flat patties about 1/2 inch thick.
    • Heat the oil in a frying pan on medium high heat. Drop the cutlets slowly into it, taking care not to overlap them.
    • Fry the cutlets until they are golden brown, turning occasionally. This should take about 5 to 6 minutes. Take them out over a paper towel.
    • For best taste serve them hot. Cutlets taste great with cilantro chutney.

    • Heat the oil in a saucepan on medium-high heat. Oil should be moderately hot add cumin seeds. After the cumin seeds crack, add the spinach.
    • Stir-fry, making sure to press the spinach down so the water can evaporate. Cook the spinach until most of the water has evaporated. Spinach still should be moist not dry.
    • After spinach is at room temperature, add to the potatoes with all other ingredients, ginger, cilantro, green chilies, salt, and corn starch. Mix will be the consistency of soft dough.
    • Divided the mix to 20 equal parts and roll them into oval shapes.
    • Heat the oil in a frying pan on medium heat. The frying pan should have about 1 inch of oil. To check if the oil is ready, put small piece of the mix in oil. It should sizzle and come up slowly. If oil is very hot kababs will not cook through and will not be crispy.
    • Fry the kababs in small batches. Fry kababs until golden-brown all around, this should take about 6-7 minutes.
    • Serve them hot with sweet and sour tamarind chutney.

    Masala Khichdi is a spicy variation of simple khichdi. This is healthy but ultimate comfort food. Khichdi is basically prepared with rice and lentils. Every hosehold has their own recipe for khichdi. At my home khichdi was made just with rice and moong dal. Adding a few vegetables with spicy tomato seasoning makes khichdi a complete meal. Usually khichdi is served with yogurt, pickle and papdam.

    Ingredients
      

    • 1/2 cup moong dal washed and split
    • 1/2 cup rice
    • 1/2 cup green beans cut into about 1/2 inch pieces
    • 1 medium potato washed peeled and small cubed this will make about 1/2 cup of cubed potatoes
    • 1 tsp salt
    • 1/4 tsp turmeric haldi
    • 1 tbsp clarified butter (ghe)
    • 3 cups water for cooking

    Spices

    • 2 tbsp clarified butter or ghee
    • 1/2 tsp cumin seeds jeera
    • 1/2 tsp mustard seeds rai
    • 1/8 tsp asafetida hing
    • 1-1/2 cups tomatoes finely chopped
    • 1 green chilies finely chopped
    • 1/4 tsp red chili powder
    • 1/2 tsp salt
    • 2 tsp ginger finely shredded
    • 2 tbsp cilantro finely choped
    • 1/4 tsp garam masala

    Instructions
     

    • Wash rice and moong dal changing water 3 to 4 times, drain the water. Use the pressure cooker to save time. In preassure cooker add rice, beans, potatoes, salt, turmeric, clarified butter, and 3 cups of water.
    • Close the pressure cooker and seal the exhaust, or put the weight. Cook over high heat.
    • After the pressure cooker start steaming lower the heat to medium and cook for about 4 minutes.
    • Turn off the heat and wait until steam has stopped before opening the cooker.
    • Mix the khichdi well, dal and rice should be very soft, little mushy.
    • Heat the clarified butter in other saucepan over medium heat, Test the oil by adding one cumin seed to the oil; if it cracks right away oil is ready. Add the cumin seeds, black mustard seeds, and asafetida as seeds crack add tomatoes, green chili, ginger, salt and red pepper stir.
    • Let tomatoes cook over medium heat until they are tender and mushy. This should take about 6 to 7 minutes. Lower the heat to low. Add cilantro and garam masala, stir for a minutes.
    • Add cooked rice, mix gently, and add hot water slowly as needed. Consistency of the khichdi should be like runny dough. Note: as khichdi cools will become little thick.
    • Serve khichdi hot, and serve the khichdi with pickle, yogurt and papdam.

Lower the heat, add cilantro and garam masala, and stir for an additional minute.

    • 2 cups carrot shredded
    • 2 cups milk
    • 1/3 cup heavy cream
    • 1/2 cup sugar

    • In a large heavy frying pan bring the milk, cream and carrots to boil over medium high heat.  Do stir occasionally, making sure milk does not burn in bottom of the pan. After milk comes to boil reduce the heat to medium.
    • Let carrot cook for about 25 minutes, until carrot mix become like a lumpy dough. Keep stirring occasionally at the same time keep scraping the sides. Last ten minutes stir continuously otherwise mix will burn from the bottom.
    • Add sugar, after adding sugar mix will become very soft. Cook for about 10 minutes stirring continuously. Mix should be consistency of soft dough, add butter, cardamom and keep stirring for about another 4 minutes. Mix will be very lumpy.
    • Transfer mixture to the greased plate and press firmly into a square shape, approximately 1/2 inch high.
    • Let the burfi sit for at least two hour before slicing I prefer cutting in about 1-1/2 inch squares.
    • For garnishing put one cashew in center of every piece.

    • After milk comes to boil reduce the heat to medium and cook for 25-30 minutes, until all the moisture is absorbed and coconut is thick and creamy consistency.
    • Add sugar and cardamom to the coconut and cook for 7-8 minutes stir continuously, until all the moisture is absorbed. Coconut mix will be thick and crumbly in consistency. Turn off the heat.
    • Spread the coconut mix on the plate and let it cool of to the room temperature.
    • To make the ladoos, take about 2 tablespoons of coconut mixture into your palm. Gently press to form a smooth, round ball. Adjust the size of ladoo as you prefer

    • 1 teaspoon sugar
    • 2 tablespoons heavy cream
    • 1/2 teaspoon garam masala
    • 1/4 cup chopped cilantro 

    Instructions
     

    • Powdered the cashews and sesame seeds, (I like to use spice grinder). Set aside.
    • Pure the tomatoes, ginger and green chili. Set aside.
    • In about 2 cups of hot water soak the cubed paneeer for 5 minutes or more, this will make the paneer soft and give a nice texture. Set aside.
    • Heat the butter in sauce pan over medium heat; after butter is moderately hot add cumin seeds and asafetida. After the seeds crack add cashew nut powder and roast for about one minute. Add tomato puree and mix it well.
    • Add the remaining spices, coriander, turmeric, salt, sugar, mix it well and cover the pot. Tomatoes splatter while cooking. Cook for about four minutes stirring in between until tomatoes start leaving the oil and tomatoes will be half in quantity.
    • Add cream, cook for about two minutes stirring often. Add one cup of water, cover the pan and let it cook for about two to three minutes.
    • Take out the paneer from water and put into the gravy, stir and cover the pan and cook for about five minutes. Adjust the gravy to your liking if needed add little more water, and cook. Turn off the heat.
    • Add the cilantro and garam masala stir and cover for few minutes before serving.

    Mirchi ka Salan” is a popular Hyderabadi dish. Generally speaking, Hyderabadi dishes are very spicy and aromatic, and this is one of them. Even the name of this dish “Mirchi ka salon" reflects that. Mirch is pepper and Salan means curry.  The chili pepper is cooked in a peanut and coconut spicy curry.
    This dish is a new one for me. Many of you had requested I make this, so I decided to try it out.  Of course I turned to Google to help me out and went through many recipes.  I tried many different variations until I was satisfied with the recipe.  
    I then invited a friend who is from Hyderabad to ask her for her honest opinion. She was surprised that I had never eaten “Mirch ka Salan” before.  She gave me some suggestions and pointers to perfect my recipe. I then incorporated her ideas and tweaked the recipe.  
    Now I loved it. I know this new dish will be on my list for “go-to” dishes when having get-togethers.  So if you enjoy hot and spicy food, indulge yourself with this dish! It pairs excellently with vegetable biryani or plain white rice. Its a vegan dish which is absolutely gluten free but spicy.

    Ingredients
      

    • 8 Anaheim pepper or use the pepper which are mild
    • 1/4 cup coconut powder
    • 2 tablespoons sesame seeds
    • Approx. 3 tablespoon raw peanuts
    • 4 tablespoons oil
    • 1-1/2 tablespoon besan (Bengal gram flour)
    • 1 teaspoon cumin seeds (jeera)
    • 1/2 teaspoon mustard seeds (rai)
    • 1/2 teaspoon nigella seeds/kalanji
    • 1 tablespoon tamarind paste
    • 2 teaspoons ginger finely grated
    • 1/2 teaspoon turmeric (haldi)
    • 1 teaspoon red chili powder/adjust to taste
    • 2 teaspoons salt
    • 1 tablespoon sugar
    • 3/4 teaspoon garam masala
    • About 3 cups of water

    Instructions
     

    • Wash and wipe dry the peppers; slit the peppers vertically.
    • Grind the peanuts, sesame seeds, and coconut to make powder, set aside.
    • Mix tamarind paste, ginger, turmeric, and red chili powder with 1/4 cup of water. Set aside.
    • Use the flat frying pan, heat the oil on medium heat, and stir-fry the peppers till light brown all around. Take them out over paper towel.
    • Use the same pan as pan will have oil remaining, oil should be moderately hot. Add cumin seeds and mustard seeds as seeds crack add besan and nigella seeds stir fry for about one minute. Add the peanut powder and stir fry for about two minutes mix will be golden brown.
    • Add the spice paste and cook for 2-3 minutes stirring. Spice mix will start to leave the oil, add salt, sugar, 3 cups of water, and bring the gravy to boil.
    • Lower the heat to medium low and let it simmer for about 6-8 minutes.
    • Add the stir fried peppers and cover with gravy. Sprinkle the garam Masala, cover the pan and let it cook for another 3-4 minutes.
    • The gravy thickens as it cooks.
    • Mirchi ka Salam is ready. Serve hot over the plain rice or with briyani.

    Handvo – Baked Spicy Lentil Cake

    Handvo is a popular Gujrati snack. This is a baked, spicy lentil cake made with rice and different lentils fermented batter mixed with spices. This is served with chutney. Handvo is crisp outside and soft inside.
    I have many requests for this recipe and decided to give a try. Finely after trying few times I was happy with my last trial. Now it is the time for me to try out this recipe with friends including friends from Gujrat as they were asking for the recipe. I said wow, so here is the recipe. This is a healthier option to other fried and oily snacks and its a north indian recipe that would be loved by all.

    Ingredients
      

    • 1 cup rice
    • 1/4 cup chana dal
    • 1/4 cup curad dal split with skin
    • 1/4 cup toor dal
    • 1 teaspoon turmeric
    • About 1 inch piece ginger chopped
    • 1-2 green chili adjust to taste
    • 1-3/4 teaspoon salt
    • 2 teaspoon sugar
    • 1/8 teaspoon asafetida
    • 1/2 cup yogurt
    • 2 teaspoon oil
    • 1 cup laucki shredded (opo squash, bottlegourd, doodhi)
    • 1 teaspoon lemon juice
    • 1 teaspoon Eno fruit salt

    For Seasoning

    • 1 tablespoon oil 1 teaspoon
    • 1 teaspoon mustard seeds
    • 1/8 teaspoon asafetida
    • 1 tablespoon sesame seeds

    Also need

    • 2 teaspoon oil to grease the baking pan
    • 8×8 baking pan, for this recipe I prefer glass baking pan

    Instructions
     

    • Wash and soak rice, chana dal, toor dal, and urad dal in about four cups of water for at least four hours.
    • Drain the water and blend soaked rice, lentil, ginger, green chili lightly coarse texture, (try not to use any water). I prefer to use food processor, add yogurt, turmeric, salt, sugar and asafetida, blend it again for few more seconds. Transfer the dal mix into a bowl and let the mix ferment for about 10 to 12 hours.
    • Add the opo squash, 2 tablespoons of oil, lemon juice to the fermented dal mix and mix it well. Add ENO to the mixture and mix, this will make the handvo mix light and fluffy.
    • Grease the 8×8 baking pan generously and pour the handvo mix into the greased pan. Tap the pan; it will help spreading the mix evenly.
    • Sprinkle the sesame seeds over the handvo batter.
    • Heat the oil for seasoning in a small pen over medium heat, after oil is moderately hot add the mustard seeds and asafetida as mustard seeds crack, turn off the heat.
    • Drizzle the seasoning over the top of the sesame seeds.
    • Cover the pan with aluminum foil and place the pan on middle oven rack and bake at 350 degree F, preheated oven for 20 minutes.
    • Remove the foil and bake for another 20 minutes until top of the handvo is light golden brown or until knife inserted in center of the cake comes out clean.
    • Let the handvo cool off for about 15 minutes. Cut them in sixteen pieces. Handvo is ready to serve.
