    • 4 slices white firm bread I am using buttermilk bread
    • 3 medium size potatoes boiled peeled and mashed, about 1-1/2 cups of mashed potatoes
    • 2 tbsp chopped cilantro (hara dhania)
    • 1 tbsp chopped ginger (adrak)
    • 1 tbsp chopped green chili (hari mirch)
    • ½ tbsp cumin seeds (jeera)
    • ½ tbsp salt
    • ½ tbsp mango power (amchoor)
    • 2 tbsp melted butter
    • 2 slices cheddar cheese
    • 8 sliced tomato thinly

    Instructions
     

    • In a bowl mix potatoes, cilantro, ginger, green chili, salt, cumin seeds, and mango powder well.
    •  Lightly butter the bread slices from one side and other side spread layer of thin potato mixture evenly, and brush the butter over the mixture.
    • Heat the skillet over medium heat and put the bread slices over the skillet putting the potato mixture side down.
    • Let it cook for about 2-3 minutes or till it is golden brown from bottom. Note: if you turn too quickly the spread will start coming out. Turn it over; put one slice of cheese and tomato slices covering the bread slice.
    • Now put the other slice of bread potato side down over tomatoes and grilled both sides until sandwich is golden brown and cheese has melted.
    • Potato Sandwich is ready, slice them diagonally. Serve the sandwich with Hari Cilantro Chutney and side of Carrot Pickle.

    You can easily prepare these finger sandwiches with yogurt if you prefer.
    How to remove the water from yogurt, also known hung yogurt:
    Place a muslin or cheesecloth over a strainer and pour yogurt to drain the water.Gently squeeze the yogurt to remove excess water, making sure not to let the yogurt drain through. Place a bowl underneath the strainer and place in a refrigerator for at least 6 hours to drain more water. Yogurt will become thick in consistency, just like cream cheese.

    • 1 tbsp all purpose flour (maida or plain flour)

    • 1 tbsp lemon juice

    • Some fresh cilantro leaves
    • Bread of your choice (I like French or sourdough bread)

    Instructions
     

    • In a sauce pan cook the milk and corn kernels until corn is tender. Stir the corn occasionally making sure it doesn’t burn in the bottom of the pan.
    • Add the all purpose flour and lightly mash the corn using the food processor or blender, (do not make the paste).
    • Heat the oil in a saucepan on medium-high heat. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready.
    • When the cumin seeds crack add the corn mixture, black pepper, salt and red bell pepper.
    • Stir and reduce the heat to medium. This should take 2 to 3 minutes.
    • Next stir the cheese and close the heat.
    • Corn should be in the consistency of a spread not very dry.
    • Serve over toasted bread and garnish with minced green chili and cilantro.

    • 1 cup dried chick peas (garbanzo, kabli chana)
    • 2 tbsp chopped parsley

    • 2 tbsp olive oil

    • 1/4 cup water use as needed
    • 2 cup of thinly sliced lettuce
    • 2 medium size chopped tomatoes
    • 1/2 cup chopped cucumber
    • 4 pocket pita bread

    Instructions
     

    • In a small frying pan dry roast the sesame seeds on medium heat for 2-3 minutes.
    • mix all the ingredients and blend to make a pourable paste use water as needed
    • Keep it aside.
    • Soak the chickpeas in 4 cups of water over night. After soaking chickpeas will be about 2 and half time in volume.
    • In pressure cooker add chickpeas with the 3 cups of water. Close the cooker and put the pressure on.
    • Cook on medium high heat.
    • As pressure cooker starts steaming turn the heat down to medium and cook for about 4 minutes.
    • Close the heat and wait until steam has stopped before opening the pressure cooker. Chickpeas should be just tender not very soft.
    • Drain the water and let it cool; combine all the ingredients for falafel grind using food processor, mixture should be grainy. If needed add few spoons of water.
    • Divide the mixture in 24 equal parts or make them as desired size patties.
    • Heat oil in a frying pan on medium high heat.
    • The frying pan should have at least 1 ½ inch of oil. To check if the oil is ready, put small piece of dough in oil. The dough should come up but not change color right away.
    • Slowly drop the falafel patties in the oil and fry until they are brown in color both sides. It should take about 5-6 minutes to cook each batch.
    • Keep the patties aside.

    Serving suggestion
    1. Take pita bread and heat over the skillet on medium high heat both sides lightly.
    2. Slice the pita bread from center in half take one part and open from center looking like a pocket.
    3. Fill the pita pocket with chopped lettuce so it 1/3 full. Next add some chopped tomatoes and cucumber.
    4. Pour about one tablespoon of tahini sauce, 3 to 4 pieces of falafel and again tahini sauce.
    5. It’s best to serve the sandwich with hot falafels. Falafels can be easily re-heated before serving using an oven or toaster oven.

    Serve the falafel over green salad use the tahini sauce as a dressing.

    • 4 Kaiser Rolls or rolls of your choice
    • 2 tbsp of oil or butter

    Patties

    • 1 15 oz can of chickpeas or 1-1/2 cup boiled chickpeas, chola, kabulichana, garbanzo beans
    • 1/2 cup potatoes boiled and mashed
    • 1/4 cup plain bread crumbs
    • 1 tbsp salt
    • 1/2 tbsp cumin seeds, jeera
    • 1/4 tbsp black pepper
    • 2 tbsp chopped cilantro, hara dhania
    • 1 green finely chopped, adjust to taste
    • 1 tbsp finely shredded ginger
    • 4 tbsp of oil

    Yogurt Spread

    • 1/2 cup Greek yogurt
    • 1/2 cup spinach finely chopped
    • 1 tbsp ginger finely shredded
    • 1/8 tbsp black pepper
    • 1 green chili finely chopped, adjust to taste
    • 1/4 tbsp salt

    Also need

    • Some lettuce leaf of your choice
    • 8-10 thinly sliced tomatoes

    Instructions
     

    • For the spread mix all the ingredients together yogurt, spinach, ginger, black pepper, green chili and salt. Set aside.
    • Drain and wash the canned chickpeas, drain all the water out, in a large bowl mash the chickpeas until almost smooth. Except the oil, add all the patty ingredients to the chickpeas ( mashed potatoes, bread crumb, salt, cumin seeds, black pepper, cilantro green chili, ginger and salt).
    • Mix it well and bring it together, like dough, divide the mix into 4 equal parts making them into about 1/2 inch thick patties. Patty size should be about the size of the sandwich rolls.
    • Grease the flat frying pan generously, and heat the pan on medium high heat. After the pan is moderately hot, place the patty in the pan and oil the top of the patties generously.
    • Shallow fry the patties from both sides until golden brown, this should take about 4-5 minutes.
    • Slice the rolls through the center and lightly oil them on both sides. Toast the buns from both sides over the skillet on medium high heat.
    • Spread yogurt mix on both sides of the bun, top it with chickpea Pattie, tomato slices and lettuce. Cover with the top bun.
    • Enjoy these spicy chickpea patty sandwiches!

    For this delicious Caprese Sandwich, I have been experimenting with pesto lately and tried out this sandwich after my granddaughter requested me to make it for her. This recipe is super easy to put together on the go and it makes for the perfect lunchbox or tiffin meal.

    Ingredients
     
     

    • 4 slices French bread
    • 1 ½ Tbsp olive oil
    • 4 slices mozzarella cheese
    • 1/4 cup sun-dried tomatoes
    • 16 spinach leaves remove the stems

    Pesto

    • 1/3 cup toasted pine nuts
    • 2 cups fresh basil loosely packed
    • 1 tsp lime juice
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1/4 cup olive oil

    Instructions
     

    • To make the pesto, combine the basil, pine nuts, black pepper, salt and oil in a food processor. Blend until the mixture is well blended but still has some texture, pausing to scrape down the sides as necessary. Now add the lemon juice mix it and set aside.
    • Spread pesto over 2 slices of bread, put 2 slices of mozzarella cheese, sun dried tomatoes, and few spinach leaves and cover with other slice of bread, already has pesto.
    • Lightly oil on top side of the sandwich, other side we will oil after putting the sandwich in sandwich maker. I am using electric sandwich maker you can make it over skillet. It took me about 3 minutes to grill the sandwich.

    Notes: I usually make extra pesto, pesto can be refrigerated for about a week. You can also freeze pest, I like to freeze in ice cube try. Once frozen, transfer to a freezer bag, then you can thaw only as much as you need later.

    • Knead the paneer, add all the ingredients and mix it well.

    • spread the butter lightly on top side of the sandwich, other side we will put the butter after putting the sandwich in sandwich maker. I am using stove top sandwich maker you can use electric, or make it over skillet.
    • Cook over medium heat from both sides until golden brown this should take about 1-1/2 minutes, each side.

      Ingredients
        

      • 4 slices of bread I like to use firm bread
      • 1/3 cup cream cheese
      • 4 inch English cucumber or seedless cucumber kheera, kakdi
      • 1/4 bell pepper this will make about 1/4 cup finely chopped bell pepper capsicum, Shimla mirch, pahadi mirch
      • 2 tbsp finely chopped cilantro hara dhania
      • 1/8 tsp salt
      • 1/8 tsp black pepper
      • 1 tsp ginger finely shredded
      • 1 green chili finely chopped

      Instructions
       

      • Peel the cucumber leaving the stripes unpeeled. Shred the cucumber, after shredding squeeze the water, we need about 1/4 cup shredded cucumber after squeezing the water. Set aside.
      • Cut the bell pepper in very small pieces and squeeze the water and pet dry, need about 1/4 cup chopped bell pepper.
      • In a bowl mix all the ingredients, mix will have a texture of thick spread.
      • Spread the mix on two slices of sandwich bread, then close sandwiches with other slices of bread.
      • Remove the crest from the bread all sides and slice them in two parts. For clean cut keep the sandwiches aside and slice them after about half an hour.
      • Serve these sandwiches as a snack, or they are grate for lunch box, or picnic.

      These sandwiches stay good for a day at room temperature or you can refrigerate for 2-3 days.

    • 4 slices of firm bread

    For Filling

    • 1 cup plain yogurt
    • 1/4 cup shredded cabbage (pata gobhi or band gobhi)
    • 1/4 cup shredded carrots (gajar)
    • 1/4 teaspoon salt
    • 1/8 teaspoon black pepper
    • 1 teaspoon finely chopped ginger
    • 2 tablespoons finely chopped cilantro (hara dhania)
    • 1/2 teaspoon minced green chili, optional

    Also need

    • 1/8 teaspoon mustard seeds (rai), for seasoning
    • About 2 tablespoons soft butter

    Instructions
     

    • Put the yogurt in a strainer lined with muslin or cheese cloth. Gently squeeze excess water from the yogurt.  Make sure not to squeeze out the yogurt, and leave it at least 4 hours or more. Before removing the yogurt from muslin cloth squeeze one more time.
    • The yogurt will become thick in consistency, this is known hung yogurt, and this should make about half cup.
    • Add all the ingredients for filling with yogurt and mix it well.
    • Spread the mix over two slices of bread and cover them with other slice.
    • Heat the skillet over medium heat; grease the skillet with about half teaspoon of butter.
    • Sprinkle the skillet with mustard seeds as seeds crack place the sandwich over, brush the butter on top of the slice. Grill the sandwich from both sides until they are golden brown. This should take about one minute each side.
    • Sandwiches are ready; serve them with side of salad
    • Yogurt sandwiches taste great even at room temperature, and great for lunch box.

    Spice Mix

    • 1 red chili dry
    • 1 teaspoon coriander (dhania) seeds
    • 2 cloves (laung / lavang)
    • 1/2 inch cinnamon (dalchini)
    • 1/2 teaspoon cumin (jeera) seeds
    • 4 black pepper

    Filling

    • 1 cup potato boiled and mashed (aloo)
    • 2 tablespoons oil
    • 1/2 teaspoon cumin (jeera) seeds
    • 1/2 teaspoon salt
    • Spice mix which we prepared that should be about 1 tablespoon
    • 1 tablespoon tamarind paste (imli)
    • 3 teaspoons sugar
    • 1/2 cup water

    Also Need

    • 4 buns
    • 2 tablespoons butter for cooking

    To Serve

    • 1/4 cup roasted and crushed peanuts
    • 1/4 cup fine sev available in Indian grocery stores
    • 1/4 cup pomegranate (anar) seeds, if not available red or green grapes cut into small pieces
    • 3 tablespoons cilantro chutney (dhania chutney)

    Instructions
     

    • For Dabeli Masala: roast all the ingredients red chili, coriander, cloves, cumin seeds, cinnamon and black pepper, in a small pan on the medium heat for two minutes, spices will become very aromatic. Grind the spices to fine powder. This should make about one tablespoon.
    • For Filling: heat the oil in pan on medium heat moderately. Add cumin seeds when seeds crack add potatoes spice mix, salt and tamarind paste, mix it well.
    • Add about half cup of water mix it and bring to boil, cook on low heat for about two minutes. Mix should be consistency of thick paste. Set aside.

     How to Proceed

    • Slice the buns into halves and toast the buns over skillet on medium heat using little butter both sides.
    • Over one half of the bun put about ¼ cup of the filling, top it with chutney, pomegranate, peanuts and fine sev (you can find in Indian grocery stores), sandwich with the other half of the bun.
