    Apple Pie Paratha: A Delicious Dessert

    Apple pie is such a treat! It’s impossible to stop eating, especially when it’s made just right and served hot with vanilla ice cream. When I first came to the USA in January, it was very cold. As a vegetarian, we didn’t have too many options at that time, but we were treated to our first dessert: hot apple pie topped with vanilla ice cream. What a treat it was! I fell in love with it instantly.
    Over time, I learned to make apple pie and made it many times, but it has been a while since then. Recently, I decided to give it an Indian twist. I wanted to make it easy to prepare, so I decided to make it in paratha style, filled with sweet and sour apples. For flavoring, I used traditional spices like cinnamon, nutmeg, and cloves. You may try other fruits of your choice, such as pears and peaches—these are two I have tried. But I must admit, for me, nothing beats the sweet and sour apple flavor paired with the aroma of cinnamon.

    Ingredients
      

    For the Dough:

    • 1 cup all-purpose flour
    • ¼ cup whole wheat flour
    • 3 tbsp soft butter

    • cups grated apple Granny Smith apples or 1 large apple
    • ¼ tsp cinnamon powder
    • 1 pinch nutmeg powder
    • 1 pinch clove powder
    • ¾ cup sugar

    • For the Dough:
    • In a bowl, mix all-purpose flour, whole wheat flour, and salt. Then, add the butter ensuring it’s soft but not melted and use your fingers to combine the mixture until it becomes crumbly.
    • Slowly add water, just enough to bring the flour together, but do not knead the dough. It’s important to ensure that the paratha remains flaky. Let the dough sit for about 10 minutes.
    • For the Filling:
    • Peel and grate the apple; the grated apple should yield about 1½ cups. I like to use Granny Smith apples because they are firm and tart, but you can use other varieties, ensuring you add lemon juice to provide tartness.
    • Over low-medium heat, combine all the filling ingredients—apple, sugar, cinnamon, clove, and nutmeg in a pan.
    • Cook until the mixture becomes a soft, sticky dough, which should take about 7 minutes. Be sure to stir the filling continuously.
    • The filling should be at room temperature before making the paratha.
    • Making the Paratha:
    • Lightly knead the dough and divide it into four equal parts, rolling each into a ball between your palms.
    • Roll each dough ball into a 3-inch circle. Place about 2 tablespoons of filling in the center of the rolled dough.
    • Pull the edges of the dough to wrap it around the filling. Repeat to make all four filled balls. Let the filled balls rest for three to four minutes.
    • Meanwhile, heat a heavy flat pan over medium-high heat until moderately hot. To test, sprinkle water on the skillet—if the water sizzles right away, the skillet is ready.
    • Lightly press each filled ball in dry whole wheat flour on both sides. Using a rolling pin, gently roll the balls into five-inch circles, keeping the sealed side of the ball on top. If the dough sticks to the rolling pin or surface, lightly dust the parathas with dry flour.
    • Place the paratha on the skillet. When it starts to change color and puff up, flip it over. You will notice some golden-brown spots. After a few seconds, drizzle one teaspoon of oil over the paratha.
    • Flip it again and lightly presses the puffed areas with a spatula. Flip once more and press with the spatula, ensuring the paratha is golden-brown on both sides. Repeat for the remaining parathas.
    • These apple parathas taste like you’re having apple pie. You can make these apple pie parathas in advance; they stay good for 3-4 days at room temperature, and you can refrigerate them for 3-4 weeks.
    • When serving, reheat them over a skillet, in an air fryer, or the oven. Serve them with ice cream; I enjoy hot paratha with vanilla ice cream, while my husband prefers to melt cheese over his.

    Tips: After stuffing the parathas, let the stuffed dough balls rest for 3 to 4 minutes. This helps the dough settle, making it easier to roll the parathas without the stuffing coming out from the sides.
    Roll paratha evenly without putting too much pressure. 
    For a vegan option: I used butter to make the dough because it adds flakiness and crispness to the parathas. If you’re vegan, you can substitute butter with oil.
    Filling: The apple filling should have a soft, slightly sticky texture. If the filling will become little dry after cooling. This will make it easier to roll the parathas and ensure the filling spreads evenly.

    Avocado Chickpea Toast

    Avocado chickpea toast, a flavorful and healthy option for toast. Easy to make for a perfect lunch, it's packed with healthy fats from avocado and protein from chickpeas. Simple and quick recipes to follow.
    I was inspired by this toast the other day when I had avocado and corn dip with tortilla chips with a friend.
    Avocado won't retain its green color for more than an hour, but it will still taste good for a day. To prevent losing its green color, I'll prepare everything in advance, mixing mashed chickpeas with other ingredients and mashing the avocado with the chickpea mix when ready to serve.
    This easy avocado and chickpea spread can be enjoyed also as a sandwich or served as a dip with corn tortilla crackers or veggies!
    The avocado and chickpea toast are my all-time favorites. Chickpeas and avocado together create the most amazing toast. It's easy, healthy, fresh, and delicious! Even my grandkids like it, and they're ready to help me make it.

    • Toast the bread, spread the chickpea avocado spread over bread garnish with drizzling balsamic glaze and radish. Serve, and enjoy!

    How did I come up with this unique Banana Rice Bowl combination? At lunchtime, I craved something spicy yet easy. I decided to make banana chat, but it didn't seem filling enough. I remembered I had some cooked rice in the fridge. While taking it out, I noticed moong sprouts, and grilled tofu so I decided to add those as well. However, it looked very bland. I decided to add cucumber and tomatoes. Now it looked colorful, tempting, and healthy. To my surprise, the combination turned out delicious. It was a delightful and tasty meal.
    My son, who is a picky eater, tried and enjoyed it, also added crushed pecans to give a crunch and suggested that this should be your new recipe.
    Banana Rice Bowl is also gluten free and vegan.
    This recipe also gives you the choice to add or take out some ingredients, some suggestions replace tofu with paneer or bell pepper, apple.

    • Approx. 2-1/2 cups uncooked spiral pasta
    • Approx. 3 cups butternut squash peeled and cut in about ½ inch pieces
    • 2 tbsp oil
    • 1-1/2 tbsp salt adjust to taste
    • 1 tbsp all-purpose flour (Maida)
    • 1 cups milk
    • 1/2 cup cream
    • 1 tbsp fennel seeds crushed (Saunf)
    • 1/4 tbsp black pepper
    • 1/4 cup butternut squash shredded for garnishing
    • 1/4 cup beetroot boiled and shredded for garnishing

    Instructions
     

    • In a large pot boil the water with 1 teaspoon of salt and 1 tablespoon of oil. After water comes to the boil add the pasta. Cook the pasta until it is tender, this will take about 8-10 minutes. Drain the water and set pasta aside.
    • Cook the squash in about 1-1/2 cups of water until squash becomes very soft; puree the squash to creamy texture.
    • In a saucepan add 1 tablespoon of oil and all-purpose flour over medium heat and stir for a minute. While stirring slowly add cream making sure there are no lumps. After it comes to a boil, add milk and butternut squash puree.
    • Add salt, black pepper and fennel seeds; boil for 3-4 minutes over medium heat. Sauce should be creamy and pourable consistency.
    • Before serving pour the sauce over pasta and mix.
    • Garnish the individual pasta servings with shredded squash and top it with few slices of beetroot.

    • 2 cup of thinly sliced lettuce
    • 2 medium size chopped tomatoes

    Instructions
     

    • In a small frying pan dry roast the sesame seeds on medium heat for 2-3 minutes.
    • mix all the ingredients and blend to make a pourable paste use water as needed
    • Keep it aside.
    • Soak the chickpeas in 4 cups of water over night. After soaking chickpeas will be about 2 and half time in volume.
    • In pressure cooker add chickpeas with the 3 cups of water. Close the cooker and put the pressure on.
    • Cook on medium high heat.
    • As pressure cooker starts steaming turn the heat down to medium and cook for about 4 minutes.
    • Close the heat and wait until steam has stopped before opening the pressure cooker. Chickpeas should be just tender not very soft.
    • Drain the water and let it cool; combine all the ingredients for falafel grind using food processor, mixture should be grainy. If needed add few spoons of water.
    • Divide the mixture in 24 equal parts or make them as desired size patties.
    • Heat oil in a frying pan on medium high heat.
    • The frying pan should have at least 1 ½ inch of oil. To check if the oil is ready, put small piece of dough in oil. The dough should come up but not change color right away.
    • Slowly drop the falafel patties in the oil and fry until they are brown in color both sides. It should take about 5-6 minutes to cook each batch.
    • Keep the patties aside.

    Serving suggestion
    1. Take pita bread and heat over the skillet on medium high heat both sides lightly.
    2. Slice the pita bread from center in half take one part and open from center looking like a pocket.
    3. Fill the pita pocket with chopped lettuce so it 1/3 full. Next add some chopped tomatoes and cucumber.
    4. Pour about one tablespoon of tahini sauce, 3 to 4 pieces of falafel and again tahini sauce.
    5. It’s best to serve the sandwich with hot falafels. Falafels can be easily re-heated before serving using an oven or toaster oven.

    • 1/2 tbsp dry yeast

    • Oil to fry
    • 1 1/4  cup sugar
    • 1 cup water
    • 1/4 tbsp lemon juice
    • 1/4 tbsp cardamom powder
    • 1 tbsp blenched and sliced pistachios

    Instructions
     

    • Dissolve the yeast and sugar in ¼ cup warm water, and let it sit for about 5 minutes.
    • Mix the flour and oil together.
    • Add the yeast solution to the flour and mix. Make a smooth batter. Add water as needed. Consistency should be like pancake mix.
    • Set the batter aside and let it sit in a warm place for half hour.
    • Make sure the batter is fermented, but do not over ferment. After fermenting batter will be little lacy.

    Syrup:
    Boil the sugar and water together. Add the lemon juice, and cardamom boil for about 8 minutes until syrup is about ½ thread. Lemon juice keeps the mixture from crystallizing
     
    Making the jalebis:
    1. Heat the oil in a frying pan about 1 inch deep. To check if the oil is ready, put one drop of batter in the oil. The batter should sizzle and come up without changing in color right away.
    2. Dip the apple slices into the batter one at a time, making sure the slice is covered with the batter. Then, slowly drop the slices into the frying pan.
    3. Fry the jalebi in small batches. The jalebi will take about 4 to 5 minutes to cook.
    4. Turn them occasionally. Fry the jalebi until both sides are golden-brown.
    5. Transfer them into the warm syrup.
    6. Let jalebi soak in the hot syrup for a few seconds and take out over wire rack so excess syrup can be dripped from jalebi.
    7. Garnish with sliced pistachios.
    8. Serve hot.

    • Mix all the ingredients to mashed potatoes, mixed vegetables, cilantro, green chilies, ginger, salt, and mango powder.
    • Add 4 tablespoons of water to the All Purpose flour to make a batter and keep aside.
    • With oiled hands, divide the mixture into 10 equal parts. Shape into flat round patties about 1/2 inch thick.
    • Dip each patty in the flour batter and roll the patty in breadcrumbs and set aside.
    • Heat the oil on medium high heat in a frying pan. Frying pan should have at least 1 inch of oil. To check if the oil is ready, put one drop of batter in the oil, the batter should come up right away.
    • Fry a few cutlets at a time until they are golden-brown on both sides. Repeat this until all the cutlets are done. Serve hot.

    Tips:
    If the oil is not hot enough, the patties will break.
    If the vegetable/potato mixture looks wet, you can add some breadcrumbs.

    Ingredients
      

    for the Dough:

    • 2 ¾ cup All Purpose flour Plain flour or Maida
    • 1 cup lukewarm water
    • 1 Tbsp dry active yeast
    • 3 Tbsp olive oil
    • 1 tsp salt
    • ½ tsp sugar

    for the White Sauce:

    • 2 Tbsp olive oil
    • 2 ½ Tbsp All Purpose flour Plain flour or Maida
    • ¾ cup milk
    • 1 tsp salt
    • ½ tsp black pepper

    for Cabbage Topping:

    • 3 cup sliced cabbage
    • ½ thinly sliced red bell pepper
    • 2 Tbsp chopped cilantro Green coriander
    • 2 chopped green chilies

    Instructions
     

    Making the Dough:

    • Dissolve yeast in lukewarm water and let it sit for about 20 minutes or until the yeast becomes frothy.
    • Add sugar, salt and oil to the flour and mix well.
    • Add the yeast water and make into a dough. The dough should be soft and a little sticky. Add more water if needed.
    • Cover the dough and let it sit for about four hours. The dough should be double in volume.
    • Knead the dough well using a little dry flour.

    Making White Sauce:

    • Heat the oil in a small heavy saucepan over low-medium heat.
    • Add the flour and cook until the flour changes into a light brown color.
    • Slowly add the milk, stirring constantly. Continue cooking slowly until it is smooth and thick. Add the salt and black pepper.
    • Making Cabbage Topping:
    • Mix the cabbage, bell pepper, cilantro, and green chilies with the white sauce.

    Making the Pizza:

    • Pre-heat the oven to 500 degrees, placing a pizza stone inside for about 30 minutes so the pizza stone will be hot.
    • Divide the dough in to two equal parts and roll into two 8 inch diameter pizzas.
    • Place over greased cookie sheets. Put about a half teaspoon of olive oil over the pizza. Evenly spread the cabbage mixture onto the pizza.
    • Slide the cookie sheet on the pizza stone and let it cook for about five minutes.
    • To make a crispy pizza crust, remove the pizza from the cookie sheet and place over the pizza stone.
    • Let it cook for about 7 minutes, or until the edges are golden-brown.

    • 2 cup sliced lotus stem I am using frozen, Kamal Kakdi
    • 1 Tbsp oil
    • 1 Tbsp ginger thinly sliced, adrak
    • ½ tsp cumin seeds jeera
    • ½ tsp salt
    • ¼ tsp black pepper kali mirch
    • 1 tsp green chili finely chopped, Hari mirch
    • ½ tsp lemon juice

    Also Need for Serving

    • ½ cup whipped yogurt for serving
    • 2 Tbsp tamarind chutney please add the link check the recipe

    Instructions
     

    • pressure cook the Kamal Kakdi in an instant pot for five minutes in two cups of water. I also drained the water. Kamal Kakdi should be tender. Notes: you can also, use the pressure cooker and cook at the same time, or you can also cook in a pot for 20 minutes.
    • Drain the water and pat dry.
    • In a frying pan heat the oil over low medium heat. Add the oil, oil should be just warm add sliced ginger. Stir fry for about 2 minutes and take it out in a bowl. I will use this ginger later for garnishing. Note: I feel adding ginger later it gives a nice kick to chaat.
    • Use the same pan and it already has some left-over oil. Oil should be moderately hot, add cumin seeds. As cumin seeds crack add kamal kakdi, stir and sprinkle salt and black pepper.
    • Stir fry for one minute add about 1 teaspoon of chopped green chiles and lemon juice stir fry for about 2 minutes, turn off the heat. Kamal Kakdi is ready to be served.
    • Plating the chaat, drizzle yogurt over kamal kakdi also drizzle tamarind chutney. And finish it off with some green chilies and roasted ginger.

    Notes

    Serving suggestions: You can also serve this kamal kakdi as is as a masla kamal kakdi, sprinkle little chaat masala.

    Mexican Refried Beans and Salsa

    My ultimate favorite cuisine is of course Indian. But I must say that Mexican and Italian cuisines are close seconds! Overall, I enjoy trying new cuisines with a variety of flavors. After coming to the United States, Mexican cuisine was the first new cuisine I tried. As you already know, I have a story behind every dish.
    It was many years ago and we had just come to the United States. Some good friends of ours decided to take us to a small mom and pop Mexican restaurant. They were sure we would enjoy the food. I was a little hesitant and when the server came to take our order, I immediately began to tell her all of my limitations for food, such as no onions, garlic, and of course vegetarian. She smiled at me and proudly let me know she was the owner of the restaurant. She reassured me that I had come to the right restaurant and advised that all the food at her restaurant was made fresh that very day. She personally brought out our food which included refried beans, soft tortillas, salsa, enchiladas, and salad. I tried the food and immediately fell in love. Mexican cuisine had become another favorite cuisine, and this restaurant became our go-to place for dinner. Both dishes are also vegan and gluten free.
    I typically keep beans and salsa in my refrigerator or freezer. Both items freeze well. Also, you can come up with so many dishes using them. These are some of my favorite dishes to serve using refried beans and salsa: beans and corn chips, tostadas, burritos, and enchiladas. I hope you will enjoy these dishes!

    Ingredients
      

    Refried Beans

    • 1 cup pinto beans
    • 3 Tbsp oil
    • ½ cup tomatoes finely chopped
    • 1 tsp ginger shredded
    • 1 tsp salt
    • 2 cup of water

    Salsa

    • 5 Roma tomatoes
    • 3 Jalapeno pepper
    • 6 red whole red chili
    • 1 tsp salt
    • ¼ cup cilantro finely chopped

    Instructions
     

    How to prepare Beans

    • soak the beans for at least 6 hours in six cups of water. Drain the water boiled the beans in 3 cups of water instant pot or pressure cooker for 40 minutes. Drain most of the water and save, this will be used slowly as needed.
    • In a saucepan moderately heat the oil over medium-high heat. Add beans keep steering and keep mashing the beans. Cook for about 5 minutes. Add tomatoes, ginger and salt keep mashing, and cook for another five minutes. Add water we have saved from beans slowly as needed. As beans cool off will become thick. I used most of the water, we saved from beans. Beans should be the inconsistency of thick batter.

    How to prepare Salsa

    • dry roast the red chilies over medium heat, till they are darker in color. Remove from the pan and set aside.
    • Preheat the oven at 350-degree F. Half the tomatoes and jalapeno peppers long way. Spread them over the baking sheet, Put the tomatoes and jalapeno face down, and bake for 10 minutes.
    • Take out from the oven and remove the skin from tomatoes and jalapenos.
    • First in a food processor crush red chilies, then add tomatoes, jalapeno, and salt roughly blend them together, take it out in a bowl and add cilantro. Salsa is ready and keeps aside.
    • Beans and salsa make a good side dish for any Mexican cuisine.

    Ras Malai Cake is a twist on a very popular Bengali dessert "Ras Malai". Ras Malai is made with homemade cheese known as “paneer” or “chana”. It consists of soft paneer balls immersed in chilled creamy milk. Ras Malai has been always my favorite dessert for as long as I can remember. Back when I came to the U.S. many years ago, Indian cooking was a challenge as there were very few Indian ingredients available. Indian groceries weren't as plentiful back then. To top that off, I was also a new cook. I remember my friends and I would always experiment with different recipes for Indian food using whatever ingredients we could find. We knew we had to make do with what we had by being creative and learning to cook using the ingredients were available. One thing we discovered is using ricotta cheese as a substitute for paneer as it was the closest in consistency to paneer. We started using ricotta cheese to make many milk-based Indian desserts. It was then that I learned how to make Ras Malai. While it certainly was not the same as the "real thing", it was super simple to make and very tasty! Most importantly, I got to enjoy a little taste of home with my favorite Indian dessert! I have done one more recipe using Ricotta cheese Microwave Milk Cake. Enjoy!

    • 15 oz Ricotta Cheese whole milk
    • 2 Tbsp sugar
    • ¼ tsp cardamom powder

    Milk for Rasmalai

    • 2 cups whole milk
    • 1 ½ tbsp sugar
    • tsp crushed cardamom

    Garnishing

    • 1 tbsp sliced almonds
    • 1 tbsp sliced Pistachios
    • few strands of saffron

    Instructions
     

    • I am also using a 5×7 Pyrex pan for baking the cake, line the pan with parchment paper.
    • Mix the ricotta, sugar, cardamom, and saffron together well. Transfer the ricotta cheese mixture into a round Pyrex bowl. It should be around 1/2″ thickness. Bake it at 300 degrees F for 35 minutes.
    • After 10 minutes cover the cake with aluminum foil, which will prevent the cake browning from the top. Let it cool off to room temperature.
    • While baking the cake, prepared the milk. Boil the milk in a frying pan on medium heat until the milk reduces to about 1 cup (Make sure wet the frying pan before putting the milk to prevent milk not to burn). Stir the milk occasionally. Set aside.
    • Take the ricotta cake out into the serving plate, pour the milk over and garnish with almonds and pistachios. Keep it in the fridge for at least one hour, serve chill.

    Scalloped Potatoes (Spicy Baked Potatoes) in Creamy Sauce

    Scalloped Potatoes are a classic dish with layers of potatoes topped with a delicious creamy sauce! It is the perfect comfort food and side dish to any meal.
    A little background to the origin to this dish: When I first came to the United State, I was fortunate enough to meet a very kind elderly woman named Helen. She was so kind and helped me a lot when I first came to this country. She was the same age as my grandmother, but she wanted me to simply refer to her as Helen. We became so close that she eventually became another grandmother for my kids when I was away from my family and country. She truly was a blessing to our family. Scalloped potatoes was one of her favorite vegetarian favorite dishes to make for us. She would make this as a side dish for Easter and Thanksgiving. The ingredients are simple, and the dish is easy to make. I got inspired to make this dish while going through old photos. It has been 30 years since Helen passed away, but she will never be forgotten. I decided to add a variation to this recipe by adding some veggies and making it little spicy.

    • 3 medium sized potatoes peeled and sliced about 1/8 inch thick
    • ¼ cup green peas
    • ¼ cup corn kernels

    • 2 Tbsp cilantro chopped

    For white sauce

    • 2 Tbsp olive oil
    • 2 Tbsp all-purpose flour plain flour, maida
    • tsp black pepper
    • ½ tsp red chili flakes adjust to taste
    • ½ cup heavy cream
    • 1 ½ cup milk
    • ½ tsp salt

    Instructions
     

    Sauce

    • In a small frying pan, heat the oil over low medium heat and add all-purpose flour, stir for a minute. Add black pepper, chili flakes, and salt, stir for another minute.
    • Reduce heat to low. While stirring slowly add cream making sure there are no lumps. Add a small amount of milk at a time. The mixture will start becoming thick, continue adding a little milk at a time whisking until smooth.

    Assembly

    • Preheat oven to 350 degrees F (190 degrees C). I am using 5” x 7” Pyrex pan to make the Scalloped Potatoes. Grease the pan.
    • layer the potatoes evenly in the pan.
    • Pour cream sauce just covering the potatoes. Now spread the vegetables, bell pepper, carrots, green peas, corn, green chilies and cilantro. Layer the potato again over the vegetables. Pour the sauce making sure covering the potatoes evenly.
    • Bake it for about 40-45 minutes, potatoes should be tender and should be brown from the top.
    • Scalloped Potatoes are ready, nice color. Enjoy.

    Notes

    I prefer Yukon gold or Russet potatoes for this dish. You can use different vegetables of your choice, like broccoli, cauliflower, green beans, spinach.

    Gulab Jamun is one of the most well-liked and popular desserts in India. Gulab Jamun has a special place in my heart as it was my very first video showcased on my YouTube channel. I never thought I would be able to parlay my passion into doing something like "Manjula's Kitchen". Gulab Jamun also happens to be a family favorite so it is always a go-to dessert I prepare. My daughter-in-law, who also loves Gulab Jamun, wanted me to try out a variation of the traditional recipe. She saw a recipe online for a Gulab Jamun cake and asked me to try making my version of this recipe. She suggested that I bake the Gulab Jamun instead of frying them, but to also try and preserve the original taste.
    I decided to stick with all the original ingredients for this recipe. However, I did have to experiment with the measurements of the ingredients to maintain the cake texture. Because of the delicious cardamom flavor, another name for this recipe can be "Cardamom Cake". After experimenting with this recipe for some time, I was finally satisfied with the results. I serve the Gulab Jamun cake, adding a layer of chocolate ganache and sliced nuts. You can really experiment with this recipe and make it into a version you love. The cake tastes best if you let it sit for a few hours after baking as the texture improves the longer it sits. It also has a long shelf life when kept at room temperature for several days. Enjoy this variation on a classic dessert!

    syrup

    • 1 ½ cup sugar
    • 1 cup water
    • ¼ tsp cardamom powder
    • ¼ tsp saffron thread
    • 1 tsp lemon juice

    For serving

    • 1 Tbsp pistachio sliced
    • ¼ cup chocolate gnash

    Also need

    • 9 ½ by 5 ½ loaf pan

    Instructions
     

    • To make Gulab Jamun Cake first mix all the dry ingredients together in a bowl. Milk powder, all-purpose flour, baking soda, baking powder, sugar and cardamom powder. Mix it well
    • In another bowl take butter, butter should be at room temperature not melted, whip the butter until it is fluffy. About 1 minute.
    • Now add the dry ingredients with butter and mix it well.
    • Slowly add the milk, milk should be at room temperature, mix it for about 2 minutes, batter consistency should be like cake mx.
    • Grease the loaf pan. Pour the Gulab Jamun batter in the pan.
    • Pre heated the oven at 300-degree Fahrenheit. Bake the cake for about 25-30 minutes,
    • Cake should be light brown the Gulab Jamun color, from the top and when you insert the knife in the center of cake should pulls out clean.
    • Keep the cake aside and now make the syrup add all the ingredients for syrup, sugar, water, lemon juice, cardamom, and saffron, in a saucepan. Bring it to a boil over medium-high heat. After syrup comes to boil lower the heat to medium and let it simmer for 2 about minutes.
    • Remove the pot from the heat.
    • Before poring the syrup over the cake, Poke holes in the cake with a fork, several places. Pour the syrup over the cake while it is still warm in the pan. Save about 1/2 cup of syrup. It will look like a lot of syrup, but the cake will soak it all up. Let the cake rest for 10 minutes, then invert it onto a plate.
    • You can garnish the Gulab Jamun Cake in a variety of different ways. I am garnishing with chocolate ganache I have done the chocolate Ganache recipe see the recipe for chocolate cake and sliced pistachios. This recipe has wonderful flavor and appeals to all ages.

    Notes

    It also has a long shelf life and can be kept at room temperature for several days.
    Butter and milk should be at room temperature.
    Extra syrup you can use if you like to serve the cake as Gulab Jamun with the syrup.

    Gnocchi (pronounced No-chee) is a classic Italian dish. This vegan and gluten free Gnocchi is made with potato and Cauliflower. I have topped it off with a pear sauce to add my own twist to the recipe. This is Crispy on the outside and fluffy on the inside, this recipe is absolutely mouth-watering. This dish was a request from my granddaughter and I’m so glad I gave it a try.

    Ingredients
     
     

    For Gnocchi

    • 2 cup cauliflower florets approximately
    • 1 cup potatoes boiled, peeled and shredded
    • 2 Tbsp corn starch arrow root
    • 2 Tbsp rice flour
    • 1/2 tsp ginger paste
    • 1/2 tsp salt
    • 1/8 tsp black pepper
    • 2 Tbsp oil

    For Pear Sauce

    • 1 pear peeled and sliced
    • 1/4 cup sugar
    • 1 Tbsp olive oil
    • 1/8 tsp black paper
    • 1/4 tsp salt
    • 1 Tbsp lemon juice
    • 1 tsp ginger paste

    Instructions
     

    To make the Pear Sauce

    • Heat the pan on low medium heat, I prefer nonstick pan, cook all the sauce ingredients together, olive oil, pear, sugar, black pepper, salt, lemon juice, ginger, mix it well and cook over medium high heat.
    • Keep stirring until sugar is melted and start caramelizing while stirring keep scraping the sides. This should take about 3-4 minutes.
    • Caramelize sugar has nice aroma and gives sauce a good golden color. Transfer to small bowl and mash it. 

    To make Gnocchi (NOK-EE)

    • Make sure remove the stems, boiled them till they are tender, drain the water squeeze the cauliflower to remove the access water, and pat dry.
    • In a bowl add the cauliflower and potatoes and mash it well, add corn starch, rice flour, salt, black pepper, and ginger paste, mix it well, and knead to make a smooth dough.
    • Divide the dough in 2 equal parts and roll them in one-inch calendar shape, if it is sticking to surface sprinkle some rice flour this will help rolling.
    • Take the sharp knife and slice them about half inch thick
    • Heat the non-stick flat frying pan over medium heat and oil it generously. Spread the Gnocchi do not overcrowd them it will be hard to flip, wait for about two minutes and turn them over, they should be light golden brown, and cook from other side same, Gnocchi should be golden brown both sides.
    • Serve them pear sauce, 

    Notes

    It is important to pat dry the cauliflower or air dry.
