    How did I come up with this unique Banana Rice Bowl combination? At lunchtime, I craved something spicy yet easy. I decided to make banana chat, but it didn't seem filling enough. I remembered I had some cooked rice in the fridge. While taking it out, I noticed moong sprouts, and grilled tofu so I decided to add those as well. However, it looked very bland. I decided to add cucumber and tomatoes. Now it looked colorful, tempting, and healthy. To my surprise, the combination turned out delicious. It was a delightful and tasty meal.
    My son, who is a picky eater, tried and enjoyed it, also added crushed pecans to give a crunch and suggested that this should be your new recipe.
    Banana Rice Bowl is also gluten free and vegan.
    This recipe also gives you the choice to add or take out some ingredients, some suggestions replace tofu with paneer or bell pepper, apple.

    • 1/2 tbsp turmeric

    • 2 cup sliced cauliflower

    • 1/2  cup chopped green beans
    • 1/2  cup chopped green bell pepper
    • 2 tbsp cashew nuts broken into pieces
    • 1 tbsp salt adjust to taste
    • 2 tbsp chopped mint leaves

    For Garnish:

    • 1 tbsp garam masala
    • 4 tbsp melted butter
    • 2 tbsp sliced almonds

    Instructions

    • Wash rice gently changing water several times until the water appears clear.
    • For fluffier rice, the rice should be soaked for at least 15 minutes before cooking.
    • Drain the rice and put it into the saucepan. Add water, oil, and salt, and bring to a boil. Once the water is boiling reduce the heat to low and cover the pan.
    • Cook for about 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and fluff the rice with a fork.
    • For a few minutes soak saffron in warm milk then gently fold the milk into the cooked rice.

    Vegetable And Gravy:

    • Blend tomatoes to make a puree.
    • In a bowl add yogurt, ginger, green chili, salt, turmeric, and chili powder – mix it well.
    • Add all the vegetables (cauliflower, beans, bell pepper, carrots, paneer, cashews, ginger, and green chili) to the yogurt. Mix it well then let it marinate for 10 to 15 minutes.
    • Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil; if the seed cracks right away oil is ready. Add asafetida and cumin seeds.
    • After the cumin seeds crack, add the tomato puree, and cook on medium-high heat. While cooking the tomato puree cover the pan so the gravy does not splatter all over the burner. Cook until tomato mixture starts leaving oil and reduces to about half the volume.
    • Add the marinated vegetables to tomato puree. Let it cook covered for 10 to 12 minutes on medium heat until vegetables are tender but not mushy. Stir the vegetables in between so they cook evenly.

    Prepare The Biryani:

    • Preheat the oven to 350 degrees Fahrenheit.
    • Take a baking glass dish 9" x 9" or about the same size round bowl.
    • Put half of the cooked vegetables into the baking dish.
    • Spread half of the cooked rice over vegetables. Over the rice, sprinkle with mint and garam masala.
    • Pour the remaining vegetables evenly over the rice.
    • Spread the remaining rice evenly over the vegetables.
    • Next sprinkle sliced almonds evenly over the rice, and then spread melted butter over the entire dish.
    • Cover the pan and bake for about 30 minutes.

    There are many varieties of rice and everyone has their favorite. My favorite is Basmati rice; I like the aroma and texture of Basmati rice. Rice can be very plain or very colorful. Rice is easy to cook and can be served as a side dish or a main dish. Plain rice is served with lentils, dal, or a gravy-based dish.

    Ingredients
      

    • 1 cup Basmati rice or long grain rice
    • 2 cups water
    • ½ tsp salt
    • 1 tsp oil

    Instructions
     

    • Wash rice gently changing water several times until the water appears clear.
    • For fluffier rice, the rice should be soaked for at least 15 minutes prior to cooking.
    • Cooked rice expands to about 3 times its original size, so be sure to use the proper size pan.
    • Drain the rice and put into the saucepan. Add the water, oil, and salt, bring to a boil and turn the heat to low, and cover the pan.
    • Cook rice for about 15 minutes, or until the rice is tender and the water has evaporated.
    • Turn off the heat and fluff the rice with a fork.

    Notes

    • If rice has been soaking longer then half an hour use 2 tablespoons water less.
    • Check the rice after about 12 minutes, stirring gently. If rice is not ready cover it again and cook a few more minutes.
    • When rice is ready but you feel it is too wet, turn off the heat and keep the cover open half way.
    • Don’t check the rice repeatedly because water will evaporate faster and rice will not cook right. Also, the grains will break if you stir the rice frequently and then the rice will look and feel mushy.

    • 1 cup basmati rice or long grain rice
    • 2 Tbsp clarified butter ghee
    • 1 ¾ cup water
    • 2 Tbsp milk
    • ½ cup sugar
    • 1 piece of cinnamon stick dalchini
    • ¼ tsp saffron threads kaser
    • 4 whole cloves laung
    • ½ tsp cardamom seeds coarsely crushed, ilachi
    • Pinch of salt
    • 3 Tbsp pistachios and almonds sliced or crushed, pista, badam
    • 1 Tbsp raisins kishmish

    Instructions
     

    • Dry roast the almonds, pistachios and raisins in a pan on medium heat until the raisins puff and the nuts slightly change color. Set aside.
    • Put the rice, water, cinnamom stick, and salt in a sauce pan over medium high heat.
    • When the rice comes to boil, reduce the heat to low and cover.
    • Let the rice cook for about 15 minutes, or until the water has evaporated.
    • While rice is cooking, in a separate saucepan combine milk, butter, sugar, saffron, cloves and cardamom and bring to boil on medium heat, stir until the sugar has dissolved. Remove from the heat and set aside.
    • Add the nuts mixture and sugar syrup over the rice. Fold gently into the rice with a spoon gently to avoid mashing the rice.
    • Put the cover back over the rice and turn the heat on to very low. Let the rice simmer for 3 to 4 minutes. Turn the heat off and leave it covered for another few minutes before serving.

    Shahi Pulao or Vegetable Pulao is an exotic rice dish made for parties that combines spicy and aromatic vegetables served over rice. Rich with flavor, this is an extraordinary dish. You may also call this Biryani. This dish is made in two parts. First I prepare the rice with cumin seeds and cilantro. Then the vegetables are cooked separately with tomatoes, cashews, beans, green peas, cauliflower, and paneer. Top these vegetables over the rice and you have a mouth-watering dish!

    Ingredients
      

    For rice

    • 1 cup rice preferred basmati rice available in Indian grocery stores
    • 2 tbsp clarified butter or ghee
    • 1/2 tbsp cumin seeds (jeera)
    • About 1 inch piece cinnamon stick (dal chini)
    • 1/2 tbsp salt
    • About 1/4 cup cilantro finely chopped (hara dhania)
    • 2 cup water

    For vegetables

    • About 3 cup mix vegetables I am using cauliflower cut into small floret, green beans cut into small pieces, bell pepper cut into cubes, and frozen green peas,
    • 1/2 cup paneer cut into about 1/2 inch cubes
    • 4 cup tomatoes chopped
    • 1 green chili cut into pieces
    • About 2 tbsp ginger cut into small pieces
    • 3 tbsp oil
    • 1 tbsp cumin seeds (jeera)
    • 1/8 tbsp asafetida (hing)
    • 2 tbsp coriander powder (dhania)
    • 1/2 tbsp turmeric
    • 1/2 tbsp red chili powder
    • 1-1/2 tbsp salt
    • 1 tbsp sugar
    • 1/4 cup cashew powder
    • 1/4 cup cilantro chopped
    • 1/4 tbsp garam masala

    Instructions
     

    Rice:

    • Wash rice gently changing water several times until the water appears clear.
    • For fluffier rice, the rice should be soaked for at least 15 minutes prior to cooking.
    • Heat the oil in a saucepan. Oil is the right temperature when one cumin seed dropped into the oil cracks immediately.
    • Add the cumin seeds. When they crack, add the cinnamon stick and stir for a few seconds. Add the rice, cilantro, and salt. Stir-fry one minute.
    • Add the water and bring to a boil, turn the heat to low. Cover the pan, and Cook 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and fluff the rice with a fork.

    Vegetables

    • Blend tomatoes, green chilies and ginger to make a puree. If you prefer mild take the seeds out of green chili before blending.
    • Heat the oil in a saucepan. Over medium high heat oil should be moderately hot, add the cumin seeds, and asafetida, as seeds crack add tomato puree, coriander, turmeric, sugar and salt.
    • Lower the heat to medium, stir the spice paste occasionally when it start thickening add cashew powder and cook until paste become the thick and start leaving the oil from side.
    • Add all the vegetables and 1/4 cup of water, mix it well. Cover the pan and let it cook for about 5-6 minutes over medium heat stir few times in between. Add paneer mix and cover the pan, cook for another 3-4 minutes. Vegetables should be tender not mushy.
    • Turn off the heat add garam masala and cilantro, stir and cover the pan for few minutes before serving.
    • Serve the vegetable over hot rice.

    Once the vegetables are cooked to perfection, turn off the heat and sprinkle garam masala and freshly chopped cilantro over the mixture. Stir gently to incorporate the spices, then cover the pan and let the flavors meld together for a few minutes before serving atop the hot, fluffy rice.

    This next recipe is due to many of you requesting I do a tasty and delicious recipe using the Instant Pot. I decided to try a recipe for "Vegetable Biryani". I have been a little hesitant to do recipes using the Instant Pot. Maybe it's because I have been cooking for so long and I'm set in my habits, or maybe it's my age! I will say I have loved using my Instant Pot more as a pressure cooker and love using it for that purpose! I make lentils and legumes using the Instant Pot and think it's great. Once I use the Instant Pot more and get used to the timings, I think it will allow me to give more precise times for my recipes.
    Vegetable Biryani is a complete, satisfying, one-dish meal. My mother would often say this dish is a fancy name for vegetable pulao. However, I think it is more than that. The secret behind this flavorful Vegetable Biryani is a spice mixture that creates the perfect balance of flavors. Basmati rice with a mix of fresh vegetables combined with this spice mixture turns into a dish of perfection! If you follow my steps, you'll see I try to make this recipe as simple as possible.     • 1 cup long grain rice I preferred Basmati Rice
    • 3 Tbsp Milk
    • 1 pinch Saffron Kesar few strands
    • 2 Tbsp oil or ghee
    • ¼ cup cashews
    • 15 Raisins
    • 1 Tbsp ginger thinly sliced
    • 2 cup mixed vegetables cubed potatoes, carrots, bell pepper, green beans cut into 1-inch pieces, cauliflower florets
    • ¼ cup Plain Yogurt whisked
    • ¼ cup Mint leaves Pudhina finely chopped
    • 1 ¼ cup Water

    Spices

    • 3 whole Green Cardamom Elaichi
    • 6 Cloves Laung
    • 8 Black Peppercorns
    • 1 inch long cinnamon stick Dalchini
    • 2 Bay leaf Tej Patta
    • 1 tsp Cumin seeds Jeera
    • 1 tsp coriander powder
    • 1 tsp fennel seed powder
    • 1 tsp red chili powder adjust to taste
    • ¼ tsp Turmeric Haldi
    • 1 tsp Salt adjust to taste

    Instructions
     

    • In warm milk soak the saffron and keep aside.
    • Soak the rice for about 10 minutes, then drain the water and keep aside.
    • Use the instant pot on sauté mode add ghee after half a minute add cashews and raisins and sauté lightly roast them for about 1 minutes.
    • Add all the whole spices and sauté for 30 seconds, they will become aromatic.
    • Add all the dry spices, coriander powder, fennel seed powder, turmeric, red chili powder and salt stir for few seconds, add vegetables and yogurt mix it well, cleaning sides and making sure vegetable mix spread evenly in the pot.
    • Next spread the rice evenly over the veggies. Spread the mint leaves evenly over rice. Sprinkle saffron milk on top of the rice.
    • Add the water for cooking on top of the rice. Rice should be just immersed under water.
    • You are layering the ingredients do not stir in between the steps. Close the lid with vent in sealing position.
    • Change the instant pot setting to pressure cook mode. Secure the lid, close the pressure valve and cook for 9 minutes at high pressure.
    • After the instant pot beeps, on the instant pot panel you will notice keep warm mode. Cancel the keep warm mode and wait until it releases the pressure and open the pot, that will take about 12 minutes.
    • Open the pot and fluff the rice gently with a fork.

    Notes

    Serve hot with Plain yogurt, Spinach Raita, and my favorite is Salted Mint Lassi
    Making Vegan:
    This is a easy recipe to make vegan, soak saffron in water instead of milk and yogurt you can replace with vegan yogurt or tomato puree.

    • Boil the vegetables, potatoes, cauliflower, carrot, and green peas in 2 cups of water till they are tender and not mushy. Drain the water and set aside.
    • Heat the oil in a wide flat frying pan, on medium heat, oil should be moderately hot add cumin seeds, as cumin seeds crack add tomatoes, and cook till they are very soft and tender.
    • Add all the spices except garam masala, add turmeric, red chili powder, fennel seeds, ginger, green chili, and salt mix it well.
    • Add the vegetables, mix it and let it cook for few minutes.
    • Add the cooked rice mix it well, if it looks dry add little water and mix it very gently and let it cook for few minutes, keep stirring.
    • Turn off the heat, add garam masala, cilantro, and lemon juice, and stir gently making sure rice and vegetables are coated with spices evenly.

    Notes: I said I am making Pav Bhaji Pulao, then where is Pav Bhaji masala, fennel seed powder and garam masala together makes a Pav Bhaji Masala.
    Most of the time I add garam masala in the end, I don’t like to add the garam masala in beginning and cook with. When you add garam masala in the end it gives batter taste and aroma. 
    I like to serve Tawa Pulao with yogurt.
    This recipe is so convenient that you can even use left over rice to make it.

    • Heat the oil in a saucepan over medium heat. Oil should be moderately hot. Add the cumin seeds. When they crack, add curry leaves, ginger, and green chili, stir for few seconds. 
    • Add green peas, carrots, and corn, stir and add paneer, and salt stir for about one minute, add the rice and water. Increase the heat to high and bring it to boil. Turn the heat to low and cover the pan and cook for 15 minutes or until rice is tender and water has evaporated.
    • Turn off the heat add cilantro, and garam masala and fluff the pulao with a fork. Cover the pan for few minutes before serving.

    Ingredients
      

    • 3 cup Rice Krispies
    • 1 cup Butterscotch Morsels
    • 1/2 cup peanut butter I am using crunchy peanut butter because grandkids like this extra crunch but you can use creamy peanut butter

    For chocolate garnishing

    • 1/4 cup chocolate chips
    • 1 Tbsp cream

    Instructions
     

    • Melt butterscotch and peanut butter in a sauce pan over low heat. Note: do not overcook, peanut butter will start leaving the oil.
    • Mixture will be creamy, add Rice Krispies and fold it gently, until all the rice krispies are coated.
    • Pour the mixture into greased 5×7 pan and press it until it is flat and firm. Keep aside.
    • In a small bowl melt the chocolate and cream for 15 seconds in microwave, whip it to make it smooth if needed put it back in microwave for 5 more seconds don’t overcook the chocolate otherwise it will become granny.
    • Pour the chocolate syrup into a ziploc bag and make a small hole in one corner and drizzle the chocolate over rice krispies. Let the mixture dry for about 30 minutes and cut the Rice Krispies Treat in squares.

    • 1 cup long grain rice you can use any long grain rice
    • 3 Tbsp oil
    • 1 14 oz can tomatoes chopped
    • 1 cup corn kernels I am using frozen corn
    • 1 cup green bell pepper cut in small pieces
    • 1 tsp cumin seeds ground, jeera
    • 1 tsp salt
    • 1 Tbsp jalapeno pepper finely chopped
    • 2 cups of water
    • 1/4 cup cilantro finely chopped hara dhania
    • 2 Tbsp lime juice I prefer lime juice but lemon juice will work

    Instructions
     

    • Wash the rice and drain the water and pat dry.
    • In a frying pan heat the oil over medium high heat, when oil is moderately hot add the rice and stir fry for about 4-5 minutes till rice is lightly toasted.
    • Add vegetables, corn bell pepper and jalapeno pepper sauté, stirring frequently for about 2 minutes.
    • Add cumin powder, salt and tomato sauté, stirring frequently for about 3-4 minutes. Until most of the moisture from tomatoes has evaporated.
    • Add water stir and bring it to boil, lower the heat to low. Cover the pan and let it cook for about 10 minutes, or until all the water has evaporated. Uncover the pan let it sit for about 2-3 minutes without stirring.
    • Add cilantro and lime juice and fluff the rice gently. Rice is ready to serve.

    • 1 cup long-grain rice, I am using basmati rice
    • 1 tablespoon oil
    • 1/2 teaspoon salt
    • 2 cups water

    For mango seasoning

    • 2 cups raw mango peeled and shredded
    • 3 tablespoons oil
    • 1/2 teaspoon mustard seeds, rai
    • About 10 curry leaves
    • 2 tablespoons peanuts
    • 2 tablespoons roasted chana, optional
    • 1 tablespoon ginger sliced, adrak
    • 2 green chili seeded and sliced lengthwise
    • 1/4 teaspoon turmeric, haldi
    • 1/4 teaspoon red chili powder
    • 1 teaspoon salt
    • 1/4 cup coconut freshly shredded, I am using frozen shredded coconut
    • 1 tablespoon sugar
    • 2 teaspoons lemon juice, use as needed

    Instructions
     

    • Wash and soak the rice in about 3 cups of water for at least 15 minutes.
    • Drain the rice. In the saucepan cook, the rice with 2 cups of water, salt, and oil over medium-high heat, bring rice to a boil then turn the heat to low, cover the pan, and cook the rice for about 15 minutes, or until the rice is tender and the water has evaporated. Turn off the heat and fluff the rice with a fork. Note: Cooked rice expands to about 4 times its original size, so be sure to use the proper size pan.
    • Heat the oil in a saucepan over medium heat, oil should be moderately hot, add mustard seeds.
    • When the seeds crack adds peanuts, and roasted chana, stir fry for one minute until peanuts are lightly brown.
    • Add green chili, curry leaves, and ginger, and stir for a few seconds.
    • Next add coconut, mango, sugar, salt, turmeric, and red chili mix it well and cook over low heat for 3-4 minutes until the mango is just tender, do not overcook the mango.
    • Gently fold the rice with mango and turn off the heat. Mango rice is ready to serve.

    Once the rice is stir-fried, bring the water and salt to a boil in the saucepan. Then, reduce the heat to low and cover the pan.     Masala Khichdi is a spicy variation of simple khichdi. This is healthy but ultimate comfort food. Khichdi is basically prepared with rice and lentils. Every hosehold has their own recipe for khichdi. At my home khichdi was made just with rice and moong dal. Adding a few vegetables with spicy tomato seasoning makes khichdi a complete meal. Usually khichdi is served with yogurt, pickle and papdam.

    Ingredients
      

    • 1/2 cup moong dal washed and split
    • 1/2 cup rice
    • 1/2 cup green beans cut into about 1/2 inch pieces
    • 1 medium potato washed peeled and small cubed this will make about 1/2 cup of cubed potatoes
    • 1 tsp salt
    • 1/4 tsp turmeric haldi
    • 1 tbsp clarified butter (ghe)
    • 3 cups water for cooking

    Spices

    • 2 tbsp clarified butter or ghee
    • 1/2 tsp cumin seeds jeera
    • 1/2 tsp mustard seeds rai
    • 1/8 tsp asafetida hing
    • 1-1/2 cups tomatoes finely chopped
    • 1 green chilies finely chopped
    • 1/4 tsp red chili powder
    • 1/2 tsp salt
    • 2 tsp ginger finely shredded
    • 2 tbsp cilantro finely choped
    • 1/4 tsp garam masala

    Instructions
     

    • Wash rice and moong dal changing water 3 to 4 times, drain the water. Use the pressure cooker to save time. In preassure cooker add rice, beans, potatoes, salt, turmeric, clarified butter, and 3 cups of water.
    • Close the pressure cooker and seal the exhaust, or put the weight. Cook over high heat.
    • After the pressure cooker start steaming lower the heat to medium and cook for about 4 minutes.
    • Turn off the heat and wait until steam has stopped before opening the cooker.
    • Mix the khichdi well, dal and rice should be very soft, little mushy.
    • Heat the clarified butter in other saucepan over medium heat, Test the oil by adding one cumin seed to the oil; if it cracks right away oil is ready. Add the cumin seeds, black mustard seeds, and asafetida as seeds crack add tomatoes, green chili, ginger, salt and red pepper stir.
    • Let tomatoes cook over medium heat until they are tender and mushy. This should take about 6 to 7 minutes. Lower the heat to low. Add cilantro and garam masala, stir for a minutes.
    • Add cooked rice, mix gently, and add hot water slowly as needed. Consistency of the khichdi should be like runny dough. Note: as khichdi cools will become little thick.
    • Serve khichdi hot, and serve the khichdi with pickle, yogurt and papdam.

    1. Preparing the Ingredients: Washing and Pressure Cooking 

    Begin the process of making this flavorful masala khichdi recipe by thoroughly washing the rice and moong dal, and changing the water 3 to 4 times. Drain the water and transfer the washed rice and dal to a pressure cooker to save time. In the pressure cooker, combine the rice, beans, potatoes, salt, turmeric, clarified butter, and 3 cups of water.

    Close the pressure cooker securely and seal the exhaust or place the weight on top. Cook the mixture over high heat until the pressure cooker starts steaming. Once steaming begins, reduce the heat to medium and continue cooking for about 4 minutes.

    Once the pressure has dissipated, carefully open the pressure cooker and mix the dal khichdi masala well. The dal and rice should be very soft and slightly mushy, creating a comforting and hearty texture.

    In another saucepan, heat clarified butter over medium heat. Test the oil’s readiness by adding a cumin seed; if it crackles right away, the oil is ready. Add cumin seeds, black mustard seeds, and asafetida, and stir until the seeds crackle. Then, add tomatoes, green chili, ginger, salt, and red pepper, allowing the tomatoes to cook until tender and mushy for about 6 to 7 minutes over medium heat. Lower the heat, add cilantro and garam masala, and stir for an additional minute.

    1. Incorporating the Dal Khichdi Masala: Achieving Consistency 

    Add the cooked rice to the saucepan, mixing gently. Gradually add hot water as needed to achieve the desired consistency of the dal khichdi masala, resembling a runny dough. Note that the dal khichdi masala will thicken slightly as it cools.

    Chakli a popular snack all throughout India. Chakli is a crispy and delicious snack that is prepared for holidays. It is perfect with a hot cup of Chai. In my opinion, chakli is a must-have munchie! Chakli is prepared many different ways using different pulses with rice.  I plan on making Chakli with rice flour and moong dal.

    Ingredients
      

    • 1 cup rice flour
    • 1/4 cup washed yellow moong dal
    • 1/4 cup all-purpose flour (maida, plain flour)
    • 2 tablespoons sesame seeds (til)
    • 1/2 teaspoon red chili powder
    • 1/4 teaspoon black papper
    • 1/2 teaspoon cumin seeds (jeere)
    • 1/8 teaspoon asafetida (hing)
    • 1/4 teaspoon turmeric (haldi)
    • 1 teaspoon salt
    • 1 teaspoon lemon juice
    • 2 tablespoons hot oil
    • Approx., 1/4 cup hot water use as needed
    • Oil to fry

    Also need chakli maker, available in Indian grocery stores

    Instructions
     

    • Mix all the dry ingredients in a bowl rice flour, all-purpose, sesame seeds, chili powder, black pepper, cumin seeds, asafetida, turmeric, and salt. Set aside.
    • Cook the moong dal with 2 cups of water over medium high heat till it is very soft, and mushy, if needed add more water.
    • Add hot dal to rice flour mix and mix with spoon, add lemon juice, and hot oil, and mix it well. First use the spoon to mix because mix will be quite hot.
    • Add hot water as needed to make soft and firm dough. Cover the dough and set aside for five minutes.
    • Knead the dough well. Divide the dough into 3 parts and roll them into long rolls. Put one of the roll into chakli maker, and close.  Press the chakli maker, making the chackli into spiral’s (roll them 3 to 4 times) over flat plate.
    • Heat the oil in a frying pan over medium heat, frying pan should have about one inch of oil. Oil should be moderately hot. Put few chaklies at a time just enough to cover the surface of the oil.
    • Fry them both sides until they are light brown, this should take 4 to 5 minutes.
    • Serve them after they cool off so chaklies are nice and crispy. Or store them in air tight container for later use.

    1. If dough is too soft add little more rice flour.
    2. If they are braking it is ok don’t worry still it will taste great, need some practice.
