    Ingredients
      

    • 1 cucumber peeled and cut in small cubes to make about 2 cups
    • 8 mint leaves, about
    • 3 cups Water
    • 1 tbsp lime juice adjust to taste
    • 3 tbsp sugar adjust to taste
    • 1/4 tsp salt
    • 1/4 tsp black pepper
    • ice cubes to serve

    Instructions
     

    • In a blender, puree the cucumber, mint, salt, pepper and sugar. Pour the puree through a fine mesh strainer into a bowl. Use the spoon to press the solids to take out all the juice. There will be about 1-1/4 cups of cucumber juice.
    • Add the lime juice and water mix it well.
    • Fill the glasses with ice cubes and pour the cucumber drink. Cucumber cooler is ready to be served. Enjoy!

  • Jaljeera in the Summertime!

    I have been wanted to work on my recipe for Jaljeera for a very long time now. Jaljeera is a very easy and flavorful drink to make up. I have many great memories of drinking Jaljeera in the summer. Jaljeera is similar to flavored lemonade. So I finally decided to work on the recipe and start formulating the ingredients and measurements for it. I decided my old Jaljeera recipe needed a revamp. So I decided to get inspiration from Google! While researching, I came across a blog for Jaljeera, where Naini Setalvad explains the benefits of all the spices used to make Jaljeera. This article reminded me of my grandmother’s thoughts on why Jaljeera is a great drink to enjoy on hot summer days.

    • 1/4 cup packed chopped mint leaves podhina
    • 1/4 cup packed chopped cilantro hara dhania

    •  Blend all the spices into the paste using enough water needed to blend. Strain the spice mix and squeeze all the spicy water out. Discard the roughage. Add the water, mix it and serve over the ice.

    • Blend mint  leaves with two tablespoons of yogurt to make a paste. Add yogurt, ginger  juice, salt, black salt, and one cup of water. Blend just enough to make the drink smooth; don’t over-blend as it will froth.
    • Pour it over ice cubes and garnish with roasted cumin seed powder and mint leave.
    • Lassi can be made one day in advance and refrigerated.

    *Note:
    1. Making Ginger juice: shred the ginger using a fine grater or zester and squeeze the pulp using fingers.
    2. Roasting Cumin seeds: Toast cumin in a heavy skillet over medium heat, stirring frequently, until aromatic and brown in color. You can make a small jar of this in advance and keep it for couple of months. This is used in many recipes.

     Method

    • Soak the almonds and pistachios ten minutes in hot water. Peel the skin off the almonds and pistachios.
    • Grind the almonds and pistachios until smooth, using two to three tablespoons of milk.
    • Boil the remaining milk in a heavy bottom pan over medium high heat, stirring occasionally to prevent burning.
    • Add the almond paste, sugar, cardamom and saffron strands. Lower the heat to low and let it simmer four to five minutes, stirring often. Turn off the heat.
    • Serve warm or chilled. Garnish with pistachios.

    • 1 raw green cooking mango or 3 cups peeled and sliced
    • About 1 cup sugar adjust to taste

    Method

    • Peel the mango and slice them in large pieces and remove the seed.
    • Boil the mango slices in about 2 cups of water till the mango slices are cooked well. It should take about 15 minutes.
    • After mango cools off, mix all the ingredients with the mango. Add sugar and salt slowly by adjusting to the taste.
    • Blend the mango mix and make a puree.
    • Strain the mango puree and add about 5 glasses of 8 oz cups of water. Panna should be consistence of orange juice.
    • Serve over the ice and put the fresh mint leave to garnish.
    • Enjoy it!

    Tips
    1. Depends on the mango you may have to adjust the sugar and salt.
    2. Before adding the water can be refrigerated for a week.

    • ½ cup almonds badam
    • 1 ½ cup Milk
    • 4 Tbsp Sugar
    • 1 ½ tsp whole black pepper kali mirch
    • 1 Tbsp fennel seeds saunf
    • 2 Tbsp poppy seeds khuskhus
    • 4 green cardamom ilatchi
    • 2 Tbsp rosewater
    • 2 cup water adjust as needed

    Instructions
     

    • Soak almonds in water for at least 6 hours. Peel off the almond’s skin.
    • Grind black pepper, fennel seeds, poppy seeds, and cardamom.
    • Using a blender, blend the almonds into a paste. Add just enough water to let the almond blend into a paste.
    • In the same blender add the grinded spices and about ½ cup of water with almond paste. Blend until creamy.
    • Add 1 cup of water and sugar blend until sugar dissolve.
    • Strain the mix through the fine strainer or cheesecloth.
    • Return the left over ground paste to the blender with rest of the water.
    • Blend again and extract the liquid once more.
    • Discard remaining ground mash.
    • Mix the almond liquid, milk, and rose water.
    • Thandai is ready. Serve over the crush ice.

    Notes

    Garnish with rose petals!
