    • 1 cup coconut milk
    • 2 cup soy milk
    • ¾ cup sugar
    • 2 tbsp agar-agar powder, available in Indian and Asian grocery stores

    Instructions
     

    • Boil coconut milk, soy milk, coconut, pistachios, and sugar over medium high heat. After milk comes to boil let it boil for about 7-8 minutes, stir occasionally.
    • Mix agar-agar, saffron, and cardamom powder with ¼ cup of lukewarm water making sure agar-agar is dissolved.
    • Add the agar-agar mixture to the milk and mix it well, let it boil for 3-4 minutes. Stir occasionally otherwise agar-agar can become lumpy. Turn off the heat.
    • Pour it into either flat dish or molds, while it is still hot. Note: As milk mixture will cool it will start getting firm.

    • Place graham cracker mix into a 9” pie plate, spread evenly and press down firmly.
    • Bake at 350 degrees for 6 minutes, on the medium rack.
    • Filling
    • Prepare mango by peeling and chopping into chunks.
    • Add mango chunks, cream cheese, sugar, and cornstarch to the food processor. Mix for 20 seconds, until it is smooth in texture. Do not mix for too long.
    • Pour the mixture over the pie crust and bake for 35 minutes at 350 degrees F. The surface should look dry and cooked.
    • Let the cheesecake cool and then refrigerate for at least 2 hours before serving.

    Ingredients
      

    • 6 sheets phyllo dough (one package weigh 1 pound and have 18 14 x 18 inches sheets)
    • 1/2 cup clarified butter
    • 1/2 cup ground almond
    • 1/2 cup ground walnuts
    • 1/4 cup coconut powder
    • 1/2 tsp cardamom powder
    • 1/3 cup sugar

    For Syrup and Garnishing

    • 3/4 cup sugar
    • 1/2 cup water
    • 1 tsp lemon juice
    • 1 tbsp pistachios sliced

    For baking I am using 8×8 baking pan.

    Instructions
     

    For Filling

    • Combine all the dry ingredients, ground almonds, walnuts, coconut, sugar, and cardamom.

    Making the Pastry

    • Preheat the oven 350 degree F.
    • Work on a clean, dry, flat surface, Open the phyllo dough and take 1 sheet spread over the working surface and fold it making it double in length wise. Lightly brush the butter covering the whole sheet. You will be working with the short side.
    • Leave about half inch of sheet across the short side and sprinkle 2 tablespoons of the filling from edge to edge evenly. Roll it like a jelly roll twice and brush lightly with butter, only the rolled part. Sprinkling again 2 tablespoons of the filling from edge to edge evenly.
    • Roll it up carefully, after every roll brush it with butter, and place seam side down in the baking tray. Repeat the process until you finish rolling all six sheets.
    • The pieces should fit snugly, but not squashed. With a very sharp knife, cut the roll into 3 equal pieces in length, total of 18 pieces. Lightly brush the butter over each piece.
    • Bake the baklava for about 25 to 30 minutes until they are light golden brown in color.

    Making Syrup and Finishing

    • Boil the sugar and water together until syrup is 220 degrees on candy thermometer or ½ thread. Add the lemon juice and cardamom powder and turn off the heat. Lemon juice keeps the syrup from crystallizing.
    • Carefully pour the hot (but not boiling) syrup evenly over all the baklava pieces. Sprinkle few pieces of the sliced pistachios over baklava. Allow the baklava to cool before serving. Enjoy!

    • 1/4 cup rice
    • 3 cup milk
    • 3/4  cup sugar
    • 1 15 oz can of unsweetened sliced peaches
    • 1/2 tbsp corn starch
    • 1/8 tbsp cardamom powder
    • 1 tbsp sliced almonds
    • Few slices of canned peaches
    • Few mint leaves

    Instructions
     

    • Wash rice and soaks it for fifteen minutes or more.
    • Drain the water and blend rice to a fine texture, adding just enough milk as needed to blend. Keep aside.
    • Drain the syrup from can peaches. Keep 4 slices of peach aside for garnish.
    • Puree the remaining peaches with corn starch. Keep aside.
    • Boil the milk on medium high heat and let it simmer until milk reduces to about 2 cups. After milk comes to boil it should take about 8 minutes.
    • Take about 1/4 cup of hot milk and mix it with rice paste.
    • Add rice solution to the boiling milk slowly and keep stirring continuously, making sure rice does not become in lumps and milk does not burn on the bottom of the pen.
    • Cook until milk has reduced to about half in volume and rice is cooked.
    • Next add the sugar and cardamom powder, cook for about 4 minutes on low medium heat. Turn off the heat.
    • just after turning off the heat add the peach puree gently with cooked rice.
    • Shift the phirni to the serving bowl and garnish with almond, and peach slices.
    • Let it sit in refrigerator for few hours. Serve chill

    • Drain pineapple using strainer let the juice dripped through without squeezing. Note: we will use juice and pineapple both.
    • Sift together flour, baking powder, baking soda, cardamom and salt in a bowl.
    • In center part of the flour mix, add ½ cup pineapple juice, ½ cup pineapple chunks, butter, and condense milk. Gently fold every thing together.
    • Pour the mixture in greased cake pan.
    • Bake for about 25 minutes, or until cake starts leaving the pan from sides and an insert knife in the center of the cake come out clean.
    • Remove the cake from the oven and let it cool off for few minutes only.
    • Run a knife around the edges to loosen the cake and place a flat plate over the cake pan and turn it over to transfer the cake on to the plate.
    • Prick the cake several places with a fork. Brush the top of the cake generously with the leftover pineapple juice while still hot.

I think he was giving me a not-so-subtle hint that he wanted me to experiment with this! I decided to give a try and he was very happy with the results! Soon after that this became a favorite dessert with others in my family. It's funny because my family's favorites keep changing! This is a super simple and easy recipe to make.     Ingredients
      

    • 1 ½ cup sweet potato peeled and sliced
    • ½ cup coconut milk full fat, chilled
    • 4 Tbsp cacao powder
    • 4 Tbsp sugar
    • 2 tsp vanilla extract
    • ¼ tsp cinnamon powder

    Instructions
     

    • Steam the sweet potato until soft.
    • Drain the water and wash with cold water, and pat dry them.
    • Place sweet potato, cacao, sugar, coconut milk, vanilla and cinnamon into blender and blend until smooth.
    • Take out the Chocolate Pudding into a covered bowl.
    • Refrigerate for at least an hour before serving.

    Serving Suggestions
    When it is fully blended, scoop the Pudding into the individual serving bowls and refrigerate for an hour. Remove the Pudding from the refrigerator after it has chilled. Serve the Pudding with your choice of topping. I like to garnish with sliced almonds. You may top with fresh fruit, or seeds. Also, chocolate pudding tastes great as a dip or spread.

    • 1 cup whole milk
    • 1 Tbsp cocoa powder
    • 2 Tbsp milk chocolate chips

    Gulab Jamun is one of the most well-liked and popular desserts in India. Gulab Jamun has a special place in my heart as it was my very first video showcased on my YouTube channel. I never thought I would be able to parlay my passion into doing something like "Manjula's Kitchen". Gulab Jamun also happens to be a family favorite so it is always a go-to dessert I prepare. My daughter-in-law, who also loves Gulab Jamun, wanted me to try out a variation of the traditional recipe. She saw a recipe online for a Gulab Jamun cake and asked me to try making my version of this recipe. She suggested that I bake the Gulab Jamun instead of frying them, but to also try and preserve the original taste.
    I decided to stick with all the original ingredients for this recipe. However, I did have to experiment with the measurements of the ingredients to maintain the cake texture. Because of the delicious cardamom flavor, another name for this recipe can be "Cardamom Cake". After experimenting with this recipe for some time, I was finally satisfied with the results. I serve the Gulab Jamun cake, adding a layer of chocolate ganache and sliced nuts. You can really experiment with this recipe and make it into a version you love. The cake tastes best if you let it sit for a few hours after baking as the texture improves the longer it sits. It also has a long shelf life when kept at room temperature for several days. Enjoy this variation on a classic dessert!

    • 2 cup milk powder
    • ½ cup all-purpose flour – plain flour or maida
    • ½ tsp baking soda
    • ½ tsp baking powder

    • ¾ cup whole milk

    syrup

    • 1 ½ cup sugar
    • 1 cup water
    • ¼ tsp cardamom powder

    • 1 tsp lemon juice

    For serving

    • 1 Tbsp pistachio sliced
    • ¼ cup chocolate gnash

    • 9 ½ by 5 ½ loaf pan

    Instructions
     

    • To make Gulab Jamun Cake first mix all the dry ingredients together in a bowl. Milk powder, all-purpose flour, baking soda, baking powder, sugar and cardamom powder. Mix it well
    • In another bowl take butter, butter should be at room temperature not melted, whip the butter until it is fluffy. About 1 minute.
    • Now add the dry ingredients with butter and mix it well.
    • Slowly add the milk, milk should be at room temperature, mix it for about 2 minutes, batter consistency should be like cake mx.
    • Grease the loaf pan. Pour the Gulab Jamun batter in the pan.
    • Pre heated the oven at 300-degree Fahrenheit. Bake the cake for about 25-30 minutes,
    • Cake should be light brown the Gulab Jamun color, from the top and when you insert the knife in the center of cake should pulls out clean.
    • Keep the cake aside and now make the syrup add all the ingredients for syrup, sugar, water, lemon juice, cardamom, and saffron, in a saucepan. Bring it to a boil over medium-high heat. After syrup comes to boil lower the heat to medium and let it simmer for 2 about minutes.
    • Remove the pot from the heat.
    • Before poring the syrup over the cake, Poke holes in the cake with a fork, several places. Pour the syrup over the cake while it is still warm in the pan. Save about 1/2 cup of syrup. It will look like a lot of syrup, but the cake will soak it all up. Let the cake rest for 10 minutes, then invert it onto a plate.
    • You can garnish the Gulab Jamun Cake in a variety of different ways. I am garnishing with chocolate ganache I have done the chocolate Ganache recipe see the recipe for chocolate cake and sliced pistachios. This recipe has wonderful flavor and appeals to all ages.

    It also has a long shelf life and can be kept at room temperature for several days.
    Butter and milk should be at room temperature.
    Extra syrup you can use if you like to serve the cake as Gulab Jamun with the syrup.

    • 2 cup of fresh white bread crumb, I used 4 slices of bread
    • 3 tbsp clarified butter or ghee
    • 1 cup milk
    • 1 cup sugar
    • 1 cup crushed walnuts
    • 1/4 tbsp cardamom crushed

    Instructions
     

    • Make the bread crumb, cut the bread in small pieces, and do not remove the edges. I use food processor to make crumb.
    • Dry roast the bread crumb over medium heat in a frying pan, stirring continuously, this will take about 5-6 minutes. Roasted bread crumb will be light golden in color.
    • Sprinkle the sugar and keep roasting. Sugar will be caramelized with bread crumb and will be light brown in color. This process will take about 4 minutes.
    • Add cardamom and milk keep stirring, mixture will be in texture of soft dough.
    • Add butter and roast the mix with butter for another minute, until mix will start leaving the edges. Add the walnuts and fold it with mix. Turn off the heat. And pour it over greased plate.
    • Spread it in square shape 8” x 8” let it sit for about half until it comes to room temperature. Cut them in one inch squares.
    • Delicious burfi is ready. You can store the burfi outside for a week and refrigerate for a month.

    • 1 cup seviyan/vermicelli broken in small pieces
    • 2 tbsp unsalted butter or ghee
    • 1-3/4 cups water
    • pinch salt
    • 3/4 cup sugar
    • 2 tbsp sliced almonds and pistachios
    • 4 cardamoms shelled and crushed
    • Few strings of saffron

    Instructions
     

    • Melt the butter in a heavy bottom pan over medium heat. Add vermicelli and stir fry until golden brown this should take about 3-4 minutes.
    • Add water and salt. Increase the heat to medium high and bring it to boil. After watering is boiling reduce the heat to low medium and cover the pan
    • Cook till vermicelli’s are soft and the water is absorbed but not dry. If vermicelli gets dry it will become hard after adding sugar, add 1-2 spoons of water before adding the sugar.
    • Add sugar, raisins, cardamoms, crushed saffron, almonds and pistachios (save some almonds and pistachios for garnishing). Mix it well and cook for 3-4 minutes over medium heat. Turn off the heat, cover the pan and let it sit for at least 10 minutes before serving.
    • Serve Meethi Seviyan warm, garnish with pistachios and almonds.

    It was my daughter-in-law's birthday this past weekend, and I wanted to do something nice for her. For me, the thing that gives me the most joy is making food for the people that I love, and so I decided that I would prepare something for her to drop off. Due to the quarantine, this was the best that I could do for her, so I wanted what I made to be special. I asked my husband if he had any suggestions, and he said that I should make a dessert that my daughter-in-law, son, and grandkids would all enjoy. After talking to him, I was on the search for a dessert recipe that would be easy to prepare and also not too sweet.
    This made me think of a bread pudding in a magazine that had caught my eyes just a little while ago. I had been wanting to experiment with bread pudding since then but had found nothing that I fell in love with. I decided to try again, but this time I randomly decided to use a French Baguette for the bread pudding. The texture was exactly the way I wanted it to be a little chewy in some areas while stilling melting in your mouth in other areas. After finalizing the recipe, I had my husband taste test it and he suggested that I should find a way to add chocolate as well because my grandkids love it. In order to incorporate chocolate in a way that wasn't overpowering, I decided to add a chocolate drizzle on top instead of adding it into the bread pudding. It was perfect! If desired, this dish could be given a Indian touch. For example, you can substitute the vanilla extract for cardamom powder and replace the chocolate drizzle with sliced almonds and pistachios.     For chocolate sauce

    • Place chocolate in a bowl and add the vanilla essence. Heat the heavy cream do nit boil I did in microwave for 25 seconds. Pour the cream over chocolate and stir until chocolate completely dissolve and become glossy. As chocolate sauce cool it will become little thick. Set aside.

    Making Pudding

    • In a small bowl take 1/2 cup of milk and add corn starch mix it well to smooth paste and set aside.
    • In a saucepan, take remaining milk, and cook over medium high heat stirring occasionally after milk comes to boil let it boil for 10 more minutes. Lower the heat to medium and add sugar and corn starch mix making sure no lumps.
    • Let it boil for about 5 more minutes over low medium heat. Stir the mixture continually making sure mixture is smooth and no lumps. Mixture will become thick consistency of batter. Add vanilla and cinnamon powder mix it well.
    • Preheat oven to 350 degrees F.
    • I am using 5×7 Pyrex pan to make Bread Pudding. Grease the pan.
    • Butter the bread slices lightly. Arrange the bread slanted and butter the edges. Pour the milk mixture and pour over bread slices evenly.
    • Bake in a preheated oven at 350 degrees F for about 20 to 25 minutes, till the pudding is bubbling and the top get browned.
    • Take it out from oven. For best taste Bread Pudding should be served warm. Before serving drizzle the chocolate Sauce over and sprinkle the sugar.

    Notes

    • Chocolate sauce and sugar is optional, but for me it adds to the flavor and make more enjoyable.
    • If you are not fond of chocolate, you can garnish with sliced almonds and pistachios.
    • This is an easy recipe to make my family loved it. Give it a try.
