Cabbage Pizza

Cabbage Pizza is a nice twist to traditional pizza with touch of Indian spices as a fusion. Makes 2 medium pizzas. Pizzas are generally a favorite snack of all and is a nice appetizer

Cabbage Pizza

Ingredients

for the Dough:

  • 2 ¾ cup All Purpose flour Plain flour or Maida
  • 1 cup lukewarm water
  • 1 Tbsp dry active yeast
  • 3 Tbsp olive oil
  • 1 tsp salt
  • ½ tsp sugar

for the White Sauce:

  • 2 Tbsp olive oil
  • 2 ½ Tbsp All Purpose flour Plain flour or Maida
  • ¾ cup milk
  • 1 tsp salt
  • ½ tsp black pepper

for Cabbage Topping:

  • 3 cup sliced cabbage
  • ½ thinly sliced red bell pepper
  • 2 Tbsp chopped cilantro Green coriander
  • 2 chopped green chilies

Instructions

Making the Dough:

  • Dissolve yeast in lukewarm water and let it sit for about 20 minutes or until the yeast becomes frothy.
  • Add sugar, salt and oil to the flour and mix well.
  • Add the yeast water and make into a dough. The dough should be soft and a little sticky. Add more water if needed.
  • Cover the dough and let it sit for about four hours. The dough should be double in volume.
  • Knead the dough well using a little dry flour.

Making White Sauce:

  • Heat the oil in a small heavy saucepan over low-medium heat.
  • Add the flour and cook until the flour changes into a light brown color.
  • Slowly add the milk, stirring constantly. Continue cooking slowly until it is smooth and thick. Add the salt and black pepper.
  • Making Cabbage Topping:
  • Mix the cabbage, bell pepper, cilantro, and green chilies with the white sauce.

Making the Pizza:

  • Pre-heat the oven to 500 degrees, placing a pizza stone inside for about 30 minutes so the pizza stone will be hot.
  • Divide the dough in to two equal parts and roll into two 8 inch diameter pizzas.
  • Place over greased cookie sheets. Put about a half teaspoon of olive oil over the pizza. Evenly spread the cabbage mixture onto the pizza.
  • Slide the cookie sheet on the pizza stone and let it cook for about five minutes.
  • To make a crispy pizza crust, remove the pizza from the cookie sheet and place over the pizza stone.
  • Let it cook for about 7 minutes, or until the edges are golden-brown.

    Made this pizza and while it was good, lacked a little something something. Recalling the Japanese Okinomyaki pizza, which interestingly also has a good bit of cabbage in it as well, I decided what was missing was a bit of flavor drizzled on top. Having just made pav vada’s, I had tamarind chutney, peanut chutney, and cilantro sauce leftover, so of course decided to try just a bit of each on top. YUMMY! So very good. My daughter used the cilantro chutney with cream cheese spread as a sauce on her pizza and loved that, too. Thanks for an awesome recipe that is good and also can be adapted in so many ways. 🙂

    love your pizza recipe.it was the first one i ever tried, wondering whether the smell of yeast would overpower me as it had once before when i had a disasterous encounter with homemade bread.
    This was marvelous!! I added my own toppings, including cheese cause I just love it. I also did not bother rolling out the dough. Instead, I put a sheet of baking parchment over the cookie sheet and with well oiled hands, simply patted the dough into a nice round shape. After adding the toppings i just lifted the paper and put it over the hot baking stone. This way makes clean up a snap and the pizza holds its perfect shape!! Do try it!!

    Hi Manjula Aunty! Thank you very much for the cabbage pizza! I just had it for lunch. I have been struggling to cook vegetarian dishes since I decided to raise my daughter up as a vegan. My daughter usually wouldnt like my vegan dishes I cooked. But the cabbage pizza was superb! She ate it by herself! No need for me to spend so much time convincing her to eat! Thank you so much Aunty. My husband even loved it. I cant wait to cook other recipes of yours….When my 2 year old daughter was eating your cabbage pizza…she said…” yummy…yummy..yummy” while eating and ” emmm….yummy…emmm…” then she said in chinese “haw che” means delicious……..!!!hahaha……..love you Aunty

    Today I made pizza. I had a very hard time transfering my pizza with loads of topping. I covered the baking tray with aluminium foil thinking that it would work like cookie sheet.I had done it before,it came very well.But today every thing collapsed and turned messy into the hot stone. The toppings splashed on the sides of the oven and got charred. My smoke detecter was beeping endless. My goodness.It was horrible.
    Please tell me what do u mean by cookie sheet and where do u get it. I am wondering why nobody asked this.

      Hi Arthy,
      You can get cookie trays in any store that carries the cooking or baking pans and aluminum foil will not work like cookie sheets. Pizza claps because you did not let it cook for long enough

      Hi Krithika,
      Last month I was visiting my family in India and they did not have oven and wanted to try cabbage pizza. First I cooked cabbage toping in a pan still keeping the vegetables little crisp. Next using pizza dough I made a thick roti over the tawa on medium heat. Next put the topping over dough and then toasted in toaster oven. Worked great,

    you can get yeast in most of the supermarkets. check it in flour section. Manjulaji uses dry yeast here.. that is available as well.

      You can use a good quality, heavy cookie sheet. Don’t use the cheap thin ones.

      Cover the top with aluminum foil for cooking so you have easier clean up.

    Hi Manjula Auntie,
    I cooked pizza last week. It came up really good but It was not cooked from inside. the edges are brown and cooked good from out side. Do you think we should let cook crust (Roti) for like 7 minute and then flip the roti and put cabbage mixture on it and cook it again so pizzza can cook fully

    Dear Manjula Auntie,

    I love all your recipes , as I do not eat onion and garlic these recipes are so easy to fpllow … thanks a lot for all your effort.

    will appreciate if you post few more recipes in fusion. here( In US) people like indo-western food like enchiladas, wrap, salsa dip, pasta , falafel-pita and what not. I know loads of ready made items are available in market, but people like us who dont eat onion and garlic , its very difficult for them to find and make.

    To enhance the flavor of white sauce, add a pinch of nutmeg (jaiphal) pwoder. Gives an authentic alfredo sauce-like taste.

    Hello Aunty, the crust is not getting cooked if we place the pizza directly on the stone and for how long should we bake it.

      The pizza stone has not been allowed to heat up enough if your dough is not cooking well on it. You need to wait about 30 minutes AFTER the oven (with the pizza stone already in it) has come up to full temperature before cooking the pizza.

    This question comes up often, but the answer is the same.

    There is NO substitute for yeast. It should be easy to find in the baking section of a grocery store.

    If we get the ready pizza base from outside.
    Then do we need to saute cabbage first or just put the raw cabbage on pizza base and keep it oven.

    Hello!I do not have a oven or a microwave or any other electrical appliances that can bake.I can get the base from shops but can please tell me to do the rest in a cooker or in stove?

    hi manjula ji,
    there is always some difference what u tell while cooking and what is given in recipe. which should we consider . i m so confused.
    like while making white sauce u took 1 tblsp of olive oil, 1 tblsp of flour
    but ur recipe says different

    we have tried few of your receipes and they all are amazing,i was wondering if u know the recipe of NAMKEEN LADOOS?i think they r made of daal moong and served with chutney .also if u can tell us how to make pani poori(gol gappa).thanks alot and will look for those recipes.
