  • 1 large cucumber peeled and chopped
  • 2 tbsp lemon juice

  • A handful fresh mint leaves
  • 1 tbsp sugar
  • pinch of salt

Instructions
 

  • Add the pineapple, cucumber, lemon juice, ginger, mint leaves, salt and sugar to a blender.
  • Pour in 1 cup of cold water. Blend until smooth.
  • Strain the mixture through a fine mesh sieve.
  • Serve over ice and garnish with additional mint leaves.
