    •  2-1/4 cup whole milk
    • 1-1/2 cup shredded paneer
    • 1/4 cup sugar
    • 1 tbsp corn starch arrowroot

    • In a small bowl mix the corn starch with 1/4 cup of milk and set aside.
    • In a heavy bottom pan boil 2 cups of milk over medium high heat. Wet inside of the pan with water and put about 2 tablespoons of water before pouring the milk in a pan this prevents the burning of the milk in bottom of the pan. Stir the milk occasionally.
    • After milk comes to boil reduce the heat to medium and let it boil for about 10-12 minutes.
    • Add the corn starch and mix it well, there should no lumps, after milk comes to boil let it boil for additional 2-3 minutes
    • Add the sugar and shredded paneer stir and let it boil for 4-5 minutes, stir occasionally.
    • Paneer Kheer should have consistency of a thick batter. This should be chilled before serving.

    • 4 slices bread slices, bread should be firm
    • 2 medium potatoes boiled peeled and mashed will make about 1-1/4 cup mashed potatoes

    • Trim the edges of the bread slices and cut them into two pieces. Set aside. Roll 1½ tablespoons of the mixture at a time into an oval shape. Make twelve rolls. (The size of the potato rolls will depend on the size of the bread).
    • Fill a small bowl with water to wet the bread. Dip one side of a slice of the bread lightly in the water. Place the slice between your palms and press, squeezing out the excess water. This makes the bread moist.

    • 1 cup fresh mango pulp
    • 1 tbsp lime zest
    • 1 tbsp lime juice
    • 3/4 cup sugar
    • 1 cup heavy cream
    • 1 tbsp corn starch (arrowroot)

    Instructions
     

    • Peel and slice the mango and scrape out the pulp from the seed.
    • Mix cornstarch with 2 tablespoons of water.
    • Boil heavy cream, cornstarch mix, and sugar over medium-high heat. Stir continuously otherwise cornstarch will become lumpy.
    • After cream mix comes to a boil, reduce the heat to medium low, and then cook for an addition 2 minutes.
    • Let it cool.
    • Mix in mango pulp, lime juice, and lime zest to the cream mix.
    • Transfer the mixture into a bowl or container to freeze; the container shouldn’t be very deep. I like using a glass bowl with a lid.
    • After about 2 hours remove the ice cream from the freezer and mix it until its smooth, this will give it a creamy texture.
    • At this point you can choose to freeze the ice cream in the same bowl or freeze the ice cream in individual serving cups.
    • Ice cream will take 6 to 8 hours to freeze.

    Serving Suggestion
    Serve ice cream with slice of freshly sliced mangoes and few pieces of sliced almonds.

    • 8 slice white bread firm
    • 5 oz cream cheese at room temperature
    • 3 tsp ginger paste

    • 1 tbsp mint finely chopped podhina

    • 2 pickled peperoncini, finely diced

    Instructions
     

    • Trim sides of each slice of bread. Set aside.
    • Divide the cream cheese into four equal parts.

    Tomato Sandwich

    • To one part of the cream cheese add black pepper, 1 teaspoon ginger, mint leaves and a pinch of salt. Mix well.
    • Spread cream cheese mixture onto 2 slices of bread. Place tomato slices and top with the other slice of bread to make the sandwich. Cut into 4 pieces, garnish with a dab of spread and put small piece of tomato.

    Cabbage Sandwich

    • To one part of the cream cheese add cabbage, 1 tablespoon of cilantro, 1 teaspoon ginger, half of the green chili (adjust to taste) and a pinch of salt. Mix well.
    • Spread mixture onto one slice of bread and top with another slice to make sandwich. Cut into 4 pieces and garnish with a dab of the spread.

    Cucumber Sandwich

    • To one part of the cream cheese add Hari Cilantro Chutney. Mix well.
    • Spread cream cheese mixture onto 2 slices of bread. Place cucumber slices and top with the other slice of bread to make the sandwich. Cut into 4 pieces, garnish with a dab of spread and a sliver of cucumber.

    Pineapple Sandwich

    • To one part of the cream cheese add pineapple, black pepper, 1 teaspoon ginger, pepperchini (adjust to taste), and a pinch of salt. Mix well.
    • Spread mixture onto one slice of bread and top with another slice to make the sandwich. Cut into 4 pieces and garnish with a dab of the spread.

    Tips: 
    You can easily prepare these finger sandwiches with yogurt if you prefer.
    How to remove the water from yogurt, also known hung yogurt:
    Place a muslin or cheesecloth over a strainer and pour yogurt to drain the water.Gently squeeze the yogurt to remove excess water, making sure not to let the yogurt drain through. Place a bowl underneath the strainer and place in a refrigerator for at least 6 hours to drain more water. Yogurt will become thick in consistency, just like cream cheese.

    • Crust
    • Preheat oven to 350 degree F.
    • Add broken graham crackers, sugar and butter to a food processor. Mix well until looks nicely crumbled, takes approx. 30 seconds.
    • Place graham cracker mix into a 9” pie plate, spread evenly and press down firmly.
    • Bake at 350 degrees for 6 minutes, on the medium rack.
    • Filling
    • Prepare mango by peeling and chopping into chunks.
    • Add mango chunks, cream cheese, sugar, and cornstarch to the food processor. Mix for 20 seconds, until it is smooth in texture. Do not mix for too long.
    • Pour the mixture over the pie crust and bake for 35 minutes at 350 degrees F. The surface should look dry and cooked.
    • Let the cheesecake cool and then refrigerate for at least 2 hours before serving.
    • Garnish the cheesecake with mango slices, strawberries and mint leaves.

    • 1 cup all-purpose flour plain flour, maida

    • 1/2 tsp salt

    • 1 cup moong sprouts
    • 1 cup boiled and peeled potato cut into small pieces

    • 1/4 cup tamarind chutney
    • 2 tbsp cilantri finely chopped hara dhania
    • 2 green chilies finely chopped
    • 1/4 cup fine save available in Indian grocery store optional

    Instructions
     

    Making Dough

    • In a mixing bowl add all-purpose flour, salt, and oil; add water slowly while mixing and kneading to make firm, yet pliable dough. Cover and set the dough aside for at least 10 minutes.

    Filling

    • Mix Kachori filling ingredients together, i.e. gram flour, asafetida, salt, chili flakes, mango powder and oil. Set it aside.

    Making Kachori

    • Knead dough for a minute and divide into 12 equal parts.
    • Roll dough ball into a 2-inch diameter circle and place 1 teaspoon of filling in the center. Seal by pulling the edges together to make a ball. Prepare all 12 kachoris and let sit for 3 to 4 minutes.
    • Place a filled kachori with the seam side up, onto a clean surface. Using a rolling pin roll into a circle, approximately 3 inches in diameter.
    • Heat approx. 1 ½ inches of oil in a frying pan over medium heat. To check if the oil is ready, put a little piece of dough into the oil and it should immediately rise to the surface without having changed its color.
    • Slowly drop kachoris into the frying pan making sure they don’t overlap with one another. As kachoris puff up, slowly turn them over and fry them on all sides. Turn kachoris 3-4 times until they are golden brown in color, which will take about 7KacKachorishories should be crisp. If the kachoris are fried over high heat they will be too soft.

    Notes

    Prepare Moong Sprouts
    Add ¼ teaspoon of salt and 2-3 tablespoons of water to the moong sprouts. Cover and cook over medium heat for 3-4 minutes till sprouts are tender. Set aside.
    Serving Kachories
    Gently make an inch sized hole in the center of the kachori.
    Fill with 1 tablespoon of sprouts, 1 tablespoon of potatoes, 2 tablespoons of yogurt and a drizzle with both of the 2 chutneys.
    As an option, add a little cilantro, green chili and 1 tablespoon of fine Sev. These add a little more texture and flavor to the Kachori.
    Tip:
    These Raj Kachories can be prepared in advance and stored up to 2 weeks in an air tight container, making it more convenient to serve. It is even easier if you have the Hari Cilantro and Tamarind chutneys previously stored.

    • Coarsely grind chana dal in a blender. Add yogurt, green chilies, and salt and continue blending into the paste.
    • Add coconut to the paste, a few pieces at a time and keep blending. Add water, as needed, to help with the grinding. (Adding the coconut in small amounts also helps this process).
    • Before removing from blender, taste chutney to adjust the salt and pepper. Use lemon juice to adjust the tang to suit your taste. Blend well.

    Seasoning

    • Heat oil in small pan. When hot, add black mustard seeds. When the seeds crack, add asafetida, red chilies and curry leaves.
    • Pour the seasoning mixture over the chutney.

    Ingredients
      

    • 6 sheets phyllo dough (one package weigh 1 pound and have 18 14 x 18 inches sheets)
    • 1/2 cup clarified butter
    • 1/2 cup ground almond
    • 1/2 cup ground walnuts
    • 1/4 cup coconut powder
    • 1/2 tsp cardamom powder
    • 1/3 cup sugar

    For Syrup and Garnishing

    • 3/4 cup sugar
    • 1/2 cup water
    • 1 tsp lemon juice
    • 1 tbsp pistachios sliced

    For baking I am using 8×8 baking pan.

    Instructions
     

    For Filling

    • Combine all the dry ingredients, ground almonds, walnuts, coconut, sugar, and cardamom.

    Making the Pastry

    • Preheat the oven 350 degree F.
    • Work on a clean, dry, flat surface, Open the phyllo dough and take 1 sheet spread over the working surface and fold it making it double in length wise. Lightly brush the butter covering the whole sheet. You will be working with the short side.
    • Leave about half inch of sheet across the short side and sprinkle 2 tablespoons of the filling from edge to edge evenly. Roll it like a jelly roll twice and brush lightly with butter, only the rolled part. Sprinkling again 2 tablespoons of the filling from edge to edge evenly.
    • Roll it up carefully, after every roll brush it with butter, and place seam side down in the baking tray. Repeat the process until you finish rolling all six sheets.
    • The pieces should fit snugly, but not squashed. With a very sharp knife, cut the roll into 3 equal pieces in length, total of 18 pieces. Lightly brush the butter over each piece.
    • Bake the baklava for about 25 to 30 minutes until they are light golden brown in color.

    Making Syrup and Finishing

    • Boil the sugar and water together until syrup is 220 degrees on candy thermometer or ½ thread. Add the lemon juice and cardamom powder and turn off the heat. Lemon juice keeps the syrup from crystallizing.
    • Carefully pour the hot (but not boiling) syrup evenly over all the baklava pieces. Sprinkle few pieces of the sliced pistachios over baklava. Allow the baklava to cool before serving. Enjoy!

    • 1/4 cup rice
    • 3 cup milk
    • 3/4  cup sugar
    • 1 15 oz can of unsweetened sliced peaches
    • 1/2 tbsp corn starch
    • 1/8 tbsp cardamom powder
    • 1 tbsp sliced almonds
    • Few slices of canned peaches
    • Few mint leaves

    Instructions
     

    • Wash rice and soaks it for fifteen minutes or more.
    • Drain the water and blend rice to a fine texture, adding just enough milk as needed to blend. Keep aside.
    • Drain the syrup from can peaches. Keep 4 slices of peach aside for garnish.
    • Puree the remaining peaches with corn starch. Keep aside.
    • Boil the milk on medium high heat and let it simmer until milk reduces to about 2 cups. After milk comes to boil it should take about 8 minutes.
    • Take about 1/4 cup of hot milk and mix it with rice paste.
    • Add rice solution to the boiling milk slowly and keep stirring continuously, making sure rice does not become in lumps and milk does not burn on the bottom of the pen.
    • Cook until milk has reduced to about half in volume and rice is cooked.
    • Next add the sugar and cardamom powder, cook for about 4 minutes on low medium heat. Turn off the heat.
    • just after turning off the heat add the peach puree gently with cooked rice.
    • Shift the phirni to the serving bowl and garnish with almond, and peach slices.

    Ingredients
      

    • 2 1/2 cup corn kernels
    • 2 cup milk
    • 1 tbsp all purpose flour (maida or plain flour)
    • 1/2 cup finally chopped red bell pepper (capsicum or shimla mirch)
    • 1 tbsp oil
    • 1/2 tbsp cumin seeds (jeera)
    • 1/4 tbsp black pepper
    • 1 tbsp salt
    • 1 tbsp lemon juice
    • 2 tbsp shredded parmesan cheese or Italian mix cheese
    • 1 seeded and minced green chili
    • Some fresh cilantro leaves
    • Bread of your choice (I like French or sourdough bread)

    Instructions
     

    • In a sauce pan cook the milk and corn kernels until corn is tender. Stir the corn occasionally making sure it doesn’t burn in the bottom of the pan.
    • Add the all purpose flour and lightly mash the corn using the food processor or blender, (do not make the paste).
    • Heat the oil in a saucepan on medium-high heat. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready.
    • When the cumin seeds crack add the corn mixture, black pepper, salt and red bell pepper.
    • Stir and reduce the heat to medium. This should take 2 to 3 minutes.
    • Next stir the cheese and close the heat.
    • Corn should be in the consistency of a spread not very dry.
    • Serve over toasted bread and garnish with minced green chili and cilantro.

    Ingredients
      

    • 1 cup all purpose flour (maida, plain flour)
    • ½ cup semolina (fine sooji)
    • ½ tbsp salt
    • ¼ tbsp baking soda
    • 3 tbsp butter
    • ½ tbsp cumin seeds
    • ½ tbsp chili flakes
    • ½ cup grated parmesan cheese
    • ¾ cup spinach puree
    • Oil to fry

    Instructions
     

    • Mix all purpose flour, semolina, salt, chili flakes, cumin seeds, and baking soda in a bowl together.
    • Add the butter and parmesan cheese, mix well it will be consistency of bread crumb.
    • Add the spinach puree and make firm dough.
    • Set the dough aside and cover it with a damp cloth. Let the dough rest for at least ten minutes.
    • Divide the dough in 16 equal parts and make them into balls.
    • Roll the dough about into a 5-inch circle.
    • Slice the each roll dough in 4 pieces in triangle shape.
    • Heat the oil in a frying pan on medium heat.
    • The frying pan should have at least 1 ½ inch of oil. To check if the oil is ready, put a small piece of dough in the oil. The dough should make the oil sizzle and come up slowly.
    • Make sure to place just enough chips so you can turn them over easily when frying. Fry the chips until both sides are light golden in color.
    • After chips come to room temperature they should become crisp.

    1. Spinach chips can be stored for weeks in airtight containers.
    2. If the chips are cooked on high heat, they will be soft.

    Ingredients
      

    • 3-1/2 cups milk
    • 2 tbsp yogurt or use the dry starter you can buy

    Instructions
     

    • Boil the milk and let it cool down to 110 to 120 degree. You can use a candy thermometer to check the temperature, if the milk gets too hot it kills the bacteria in the culture.
    • After milk cools down pour the milk into a bowl that you want to make the yogurt in.
    • Add 2 tablespoons of yogurt from previously home made yogurt or use the dry yogurt starter. Package will tell you how much dry starter to use. Don’t follow the other directions from the dry starter package. Mix the yogurt with milk by stirring gently.
    • Cover the bowl with a light blanket or folded sheet, and keep it in warm place for about 4 hours.
    • After yogurt is set, refrigerate for at least an hour before using.

    Tips
    If you prefer more creamy mix ¼ cup of half & half milk or boil the full milk for about 5 minutes longer to reduce the milk in volume to give more creamy texture to the yogurt.
    I have tried using starters from many store bought yogurt including organic or Greek yogurt, and they don’t work. I think because store bought yogurt has many artificial additives.
    Store bought yogurt is more firm because of the pectin.
    Yogurt can be made using 1%, 2% or full milk and full milk yogurt will have more body to it.
    There are two ways to make yogurt creamier. 1) With 3 cups of milk use 1 cup of half & half milk OR 2) boil the full milk for about 5 minutes longer to reduce the milk in volume to give more creamy texture to the yogurt.

    • 4 cup yogurt
    • ¾ cup sugar as needed
    • Few strands of saffron
    • tbsp warm milk
    • ¼ tbsp crushed cardamom
    • 1 tbsp sliced almonds
    • 1 tbsp sliced pistachios

    Instructions
     

    • Drain the yogurt – Put a muslin or cheese cloth over a strainer. Now pour the yogurt over muslin cloth to drain. Place a bowl underneath the strainer to collect the excess water.
    • Next gently squeeze the excess water from yogurt. Make sure not to squeeze out the yogurt.
    • Move the yogurt with strainer and bowl into the refrigerator for at least six hours to drain excess water.
    • Yogurt will become thick in consistency.
    • Dissolve the saffron in warm milk. Milk will take on the saffron color, yellowish orange.
    • Add sugar, cardamom powder, and saffron milk to yogurt and beat well till sugar dissolves. You may use a mixer.
    • Mix in most of the almonds and pistachios to the yogurt mix and the remaining nuts will be used for garnish.
    • Chill the shrikhand before serving.
    • Traditionally shrikhand is served with puri (fried flat bread).

    Notes
    When the water is draining from the yogurt, it’s suggested to keep the yogurt in the refrigerator in order to keep the yogurt from becoming more sour.
