    Ingredients
      

    • 1/2 cup corn starch or arrowroot
    • 2 cup water
    • 1/2 cup sugar
    • 1/4 cup water
    • 12 strings of saffron

    • Wide bowl of ice cold water with some ice

    Instructions
     

    • For syrup boil sugar, water and saffron together, as it comes to boil turn of the heat and stir the syrup making sure sugar has dissolved. Syrup needs to be chilled before serving, keep it in refrigerator.
    • Add water to corn starch slowly making sure there is no lumps, batter will look like consistency of milk.
    • Over low medium heat in a frying pan add the batter and cook stirring continuously till corn starch become translution and consistency of thick batter or soft lumpy dough. This will take about 10-12 minutes. Turn off the heat and remove from stove.
    • Let the mix cool off little bit and pour the hot mixture into sev maker using fine sev attachment. Press the sev maker over ice cold water, and let the sev string drop into the bowl.
    • Leave the falooda in ice cold water at least for 2 hours before using.
    • Falooda will stay good for about a week in refrigerator, but make sure falooda stays in chilled water.

    Serving the Falooda Kulfi
    Use individual serving bowl, first layer the bowel with falooda, drizzle about 1 tablespoon of syrup. Put the kulfi then over the kulfi put some more faluda and finish off drizzling 1 tablespoon of syrup. Falooda kulfi is ready to serve! This just taste great.

    When you mention about Rajasthani food dal bati has to be on the top of the list, otherwise it is incomplete. Dal bati is a popular Rajasthani delicacy. Dal is simply soup of mixed lentils, cooked with spices. Bati is a baked, whole wheat bread rolls and the combination is known as dal bati. Traditionally bati is cooked over charcoal, but oven also works great.
    My daughter in law is from Jaipur, Rajasthan; I can entice her any time just mentioning dal bati and gatte ki kadhi.  First time I had dal bati in Jaipur, Apno Gaon a restaurant with village setting that was a memorable experience. They served dal bati with buttermilk known as chaach. I suggest having this for leisurely lunch/dinner.

    Ingredients
      

    • 1/4 cup chana dal (split gram)
    • 1/4 cup toor dal
    • 1/4 cup moong dal (split with skin)
    • 1/4 cup urad dal (split black lentil with skin)
    • 1/4 tbsp turmeric (haldi)
    • 2 tbsp ginger grated
    • 1-1/2 tbsp salt
    • 1 tbsp coriander powder (dhania)
    • 2 tbsp mango powder (amchoor)
    • 1/2 tbsp garam masala

    For seasoning

    • 3 tbsp clarified butter (ghee)
    • 1 tbsp cumin seeds
    • 1/8 tbsp asafetida (hing)
    • 1/2 tbsp chili powder
    • 2 dried red chili broken in pieces

    For Bati

    • 1 cup whole wheat flour (roti ka atta)
    • 1/4 cup fine sooji (semolina)
    • 1/8 tbsp baking powder
    • 1/2 tbsp salt
    • 1/4 cup clarified butter (ghee)
    • 1/2 cup milk use as needed

    For serving

    • About 1/4 cup hot clarify butter (ghee)

    Instructions
     

    • Combine all dals, wash changing water few times. In a pressure cooker add dal with 4 cups of water, salt, turmeric, coriander powder, and ginger, cook on medium high.
    • After pressure cooker start steaming lower the heat to medium and cook for about eight minutes. Turn off the heat; wait until all the steam has escaped before opening the cooker.
    • Dal should be soft and mushy, consistency of the pourable batter, if needed add hot water. The consistency of the dal will thicken over time.
    • Add garam masala and amchoor, mix it well.
    • Heat ghee in a small saucepan for seasoning; after ghee is moderately hot add cumin seeds as they crack add asafetida, red chilies and red chili powder.  Stir for a few seconds. To prevent the spices from burning, you may add 1 teaspoon of water.  Pour spiced Chaunk over dhal. Mix it well and let it simmer for two to three minutes.
    • Dal is ready.

    For the Bati

    • Preheat the oven to 350 degree F.
    • In a mixing bowl mix all the dry ingredients together, flour, sooji, salt and baking soda. Add the ghee and mix with fingers, add the milk as need to make firm dough, knead the dough well. Set aside for about 10 minutes.
    • Divide the dough into 8 equal parts and roll them into balls. They will not be very smooth dough ball and will have cracks all over; this will help them to cook all the way through. Arrange the batis over cookie sheet about one inch apart and place the pan on middle oven rack and bake at 350 degree F in a preheated oven for 25 minutes. Turn them over and bake for another 30 minutes until batis are golden brown all around.
    • Break one bati from one side to make sure they have cooked through.

    How to Serve
    1. Break the bati into two pieces and pour about one teaspoon of hot melted ghee over and serve with bowl of hot dal.
    2. If you have baked the batties earlier heat the batties in oven for about 10 minutes.

    • 2 large potatoes peeled and cubed in small pieces, (will make 2 cups of cubed potatoes)
    • 2 cup packed spinach roughly chopped
    • 2 green chilies finely chopped, adjust to taste
    • 1 cup besan (gram flour, available in Indian grocery stores)
    • 2 tbsp rice flour
    • 1/2 tbsp red pepper, adjust to taste
    • 2 tbsp coriander crushed (dhania)
    • 1 tbsp mango powder (amchoor, available in Indian grocery stores)
    • 1 tbsp cumin seeds (jeera)
    • 2 tbsp salt
    • ¼ tbsp asafetida (hing)
    • Approx. 2 tbsp of water adjust as needed
    • Also need oil to fry

    Instructions
     

    • Combine all the dry ingredients, besan, rice flour, coriander, cumin seeds, red pepper, salt, mango powder, and asafetida in a bowl. Mix it well.
    • Add potatoes, spinach, and green chilies into dry mix, mix it well and add water as needed to make soft and sticky dough. When you are ready to fry pakoras mix the veggies with dry ingredients, otherwise spinach and potatoes will leave the water because of salt.
    • Heat at least one inch of oil in a frying pan over medium high heat. To test, put one drop of batter in the oil. The batter should come up and not change color instantly.
    • Place about one tablespoon of mix holding with your fingers into the oil. Do not over lap the pakoras.
    • Fry the pakoras in small batches; this will take three to four minutes per batch. Fry the pakoras, turning occasionally, until both sides are golden brown.
    • Repeat this process for the remaining batches.
    • The crispy, delicious pakoras are now ready to serve.

    • 4 Kaiser Rolls or rolls of your choice
    • 2 tbsp of oil or butter

    Patties

    • 1 15 oz can of chickpeas or 1-1/2 cup boiled chickpeas, chola, kabulichana, garbanzo beans
    • 1/2 cup potatoes boiled and mashed
    • 1/4 cup plain bread crumbs
    • 1 tbsp salt
    • 1/2 tbsp cumin seeds, jeera
    • 1/4 tbsp black pepper
    • 2 tbsp chopped cilantro, hara dhania
    • 1 green finely chopped, adjust to taste
    • 1 tbsp finely shredded ginger
    • 4 tbsp of oil

    Yogurt Spread

    • 1/2 cup Greek yogurt
    • 1/2 cup spinach finely chopped
    • 1 tbsp ginger finely shredded
    • 1/8 tbsp black pepper
    • 1 green chili finely chopped, adjust to taste
    • 1/4 tbsp salt

    Also need

    • Some lettuce leaf of your choice
    • 8-10 thinly sliced tomatoes

    Instructions
     

    • For the spread mix all the ingredients together yogurt, spinach, ginger, black pepper, green chili and salt. Set aside.
    • Drain and wash the canned chickpeas, drain all the water out, in a large bowl mash the chickpeas until almost smooth. Except the oil, add all the patty ingredients to the chickpeas ( mashed potatoes, bread crumb, salt, cumin seeds, black pepper, cilantro green chili, ginger and salt).
    • Mix it well and bring it together, like dough, divide the mix into 4 equal parts making them into about 1/2 inch thick patties. Patty size should be about the size of the sandwich rolls.
    • Grease the flat frying pan generously, and heat the pan on medium high heat. After the pan is moderately hot, place the patty in the pan and oil the top of the patties generously.
    • Shallow fry the patties from both sides until golden brown, this should take about 4-5 minutes.
    • Slice the rolls through the center and lightly oil them on both sides. Toast the buns from both sides over the skillet on medium high heat.
    • Spread yogurt mix on both sides of the bun, top it with chickpea Pattie, tomato slices and lettuce. Cover with the top bun.
    • Enjoy these spicy chickpea patty sandwiches!

Gulab jamuns are served for almost every celeberations. Gulab jamuns can be served warm or at room temperature. Gulab jamun is one of the desserts I make the more often, because this is an easy recipe to make and in my family everyone like them especially my grandkids.

    Ingredients
      

    • 1 cup nonfat milk powder
    • 1/4 cup All Purpose flour plain flour, maida
    • 3 Tbsp unsalted butter at room temperature
    • 1/4 cup room temperature whole milk
    • Pinch of baking soda
    • 1 3/4 cup sugar
    • 1 1/2 cup water
    • 4 cardamom pods (ilachi) coarsely ground
    • 1 Tbsp sliced almonds and pistachio
    • Oil for deep-frying

    Instructions
     

    Syrup

    • In a large pan, combine the water, sugar, and ground cardamom seeds and bring to a boil. Let the syrup boil for another minute to completely dissolve the sugar. Turn off the heat.
    • Set the syrup aside.

    Gulab Jamun

    • In a bowl, mix the milk powder, flour and baking soda.
    • Add the butter and mix well.
    • Add milk to make soft dough. The dough will be sticky. The milk powder will absorb the extra milk.
    • If the dough is dry, add more milk to make it soft. Let the dough sit for a few minutes.
    • Grease your palms with butter and knead the dough.
    • Divide the dough into about ten equal parts and roll them into round balls.
    • Heat at least one inch of oil in a frying pan over medium heat. To test, place a small piece of dough into the oil; the oil should sizzle and the dough should take a minute to rise. If the dough rises faster, the oil is too hot; if oil does not sizzle, it is not hot enough.
    • Place the gulab jamuns in the frying pan. Do not crowd them, as the gulab jamuns will expand to about double their original volume.
    • Fry the gulab jamuns on medium heat for about seven minutes, rolling them around for even browning until dark brown.
    • Let the gulab jamuns cool a few minutes before placing into the hot (not boiling) syrup.
    • Let the gulab jamuns sit in the syrup for at least 20 minutes prior to serving.

    Notes

    Gulab jamuns can be kept at room temperature for about a week and up to one month when refrigerated. They can be frozen for months.
    Tips
    If the gulab jamuns are fried on high heat, they will be hard inside and not fully cooked.
    Too much baking soda will make the gulab jamuns too soft or cause them to break when frying.
    Don’t place the gulab jamuns in the syrup immediately after frying, or they will lose their shape and be  chewy.

    Gulab jamuns can be served warm or at room temperature. They can also be served with ice cream.

Bread Pakoras are made so many different ways, but this time I have layered the bread with spicy sweet and sour potatoes like chutney. Before I decided to do this recipe, I have served these pakoras to many friends, the only thig they could say wow. They could not figure out what I have used for filling.     Ingredients
      

    • 4 slices of while bread

    For Batter

    • 1 ½ cup besan gram flour
    • 2 Tbsp corn starch
    • ¼ tsp baking soda
    • tsp asafetida hing
    • ½ tsp salt
    • 1 tsp oil
    • About ¾ cup of water

    For Filling

    • 1 cup potato boiled and mashed
    • 1 ½ Tbsp oil
    • 1 tsp cumin seeds jeera
    • tsp asafetida hing
    • 2 tsp coriander powder dhania
    • 1 Tbsp ginger finely chopped
    • 1 Tbsp green chili chopped
    • ½ tsp red chili powder
    • ½ tsp salt
    • ½ tsp black salt
    • 2 Tbsp mango powder amchoor
    • 1 ½ Tbsp sugar
    • ¼ tsp garam masala
    • ¼ cup cilantro chopped

    Instructions
     

    Batter

    • In a bowl mix all the dry ingredients together, besan, corn starch, salt, asafetida and baking soda, mix it well. Add oil and add water slowly to make a thick and smooth batter. Set aside.

    Filling

    • In a frying pan heat the oil over medium heat. When oil is moderately hot add cumin seeds, asafetida, coriander powder, ginger, green chili, and red chili powder stir fry for few seconds.
    • Next add potatoes, salt, black salt, mango powder, garam masala and sugar stir for about 2 minutes, add ½ cup of water keep stirring and keep mashing the mix if needed add little more water. Mix should be very mushy and soft like a spread. Add cilantro and mix it well.
    • Taste the potato mix it should be spicy after you spread the mix to bread and fry with batter spice level will go down. I always keep the mix extra spicy. Mix is ready keep aside.

    Making Pakoras

    • Spread the mix generously on two slices of bread, then close sandwiches with other slices of bread.
    • Remove the crest from the bread all sides and slice them in the shape you like. I am slicing them in 6 pieces because the bread I am using have big slices.
    • Heat about 1 inch of oil in a frying pan on medium high heat moderately. To check if the oil is ready, put one drop of batter in oil. The batter should come up but not change color right away.
    • Dip the bread into the batter one at a time, making sure bread are completely covered with batter. Then, slowly drop them into the frying pan.
    • Turn them quick and take them out quick. We are going to double fry these pakoras. Fry them all then put them back in frying pan and fry the pakoras until they are golden-brown both sides.

    Pakoras can be serve with your choice of chutney:

This is a good alternative to regular dosa it is quick and easy to make. Sorghum Dosa batter does not need to be fermented. Sorghum dosa also vegan and gluten free. It is crispy and has a lacy look like Rava Dosa. You can serve this with traditional Samber and coconut Chutney or serve for a snack with cilantro Chutney.This recipe will serve 3.

    Ingredients
      

    • ½ cup sorghum Jowar flour
    • ¼ cup rice flour Chawal ka atta
    • ½ tsp cumin seed jeera
    • tsp asafetida hing
    • ¼ tsp salt
    • tsp crushed black pepper
    • 1 Tbsp finely chopped cilantro hara dhania
    • 1 ½ cup water
    • 3 Tbsp of oil for cooking dosa

    Instructions
     

    • Mix all the dry ingredients together, sorghum flour ( Jowar), rice flour, cumin seeds, asafetida, salt, black pepper.
    • Add water slowly to make a thin batter and avoiding any lumps. Batter should have pouring consistency like buttermilk. Let the batter stand for about 30 minutes.
    • Before making dosa add cilantro. Mix it well.
    • Heat the skillet on medium high. To check if the skillet is ready sprinkle a few drops of water over the skillet water should sizzle. Wipe the skillet with few drops of oil.
    • Pour the batter with a ladle, keep the ladle about 4 inches high from the skillet in a circular motion starting from the center. Keep pouring the batter till it is the size you will like the dosa. Notes: dosa will no be perfectly round.
    • Do not try to spread the batter, Dosa should have holes like swiss cheese or have lacy look.
    • Drizzle 1 teaspoon of oil around dosa.
    • Cook Dosa over medium heat for about 2 minutes or until Dosa becomes golden brown. Turn the Dosa using spatula.
    • Let Dosa cook for about 1 minute from another side. Dosa will be golden brown on one side and light color on other side. Thin and crispy Sorghum Dosa is ready to serve.
    • Dosa has a look of Rava dosa but Sorghum Dosa is also gluten free and vegan.

    • 2 potatoes use russet potatoes
    • ½ tsp salt
    • Oil to fry

    Instructions
     

    • Wash and peel the potatoes, and slice potatoes into French fries, and place into ice cold water for at about 10 minutes. Soaking in water potatoes some of the starch will come out and water will look fogy. Remove them from water to clean kitchen towel and pat dry.
    • Heat oil in a frying pan over medium-high heat. Put the fries into oil, don’t over crowed them. Notes: overcrowding fries will bring oil temperature to very low and fries can become very oily.
    • Turn the fries occasionally, fry until golden brown it should take about 6-8 minutes. Remove fries from oil with a slotted spoon to drain on paper towel. Sprinkle the salt and fries are ready to serve.

    My family and friends enjoy the fries with tamarind chutney, this exotic sweet and sour chutney is a delicious condiment. I always have this in my refrigerator. My grandkids also like to have a lemonade or Mango lassi with French fries.

    Avocado Paratha, these days I'm spending a lot of time at home, so I decided to experiment in the kitchen. I had one extra avocado left after making some guacamole dip. Avocados seem to be very popular these days most often served as "Avocado Toast". I decided to put an Indian twist and use the extra avocado in delicious flavorful parathas. It actually turned out great and I enjoyed, but I think it needed a few tweaks. I added some extra spices and it turned out even better.
    Avocados have many health benefits, including being a "healthy" fat and they taste great! I like to serve Avocado Parathas as a snack with tea. It can also be served with any gravy-based dish; however, I think its complemented perfectly with "Aloo Tamatar" or "Spinach Raita". This is also a satisfying lunch box meal.

    Ingredients
      

    • 1 large ripe avocado
    • 1 ¼ cup whole wheat flour use as needed
    • ½ tsp salt
    • ½ tsp cumin seeds jeera
    • tsp asafoetida hing
    • 1 Tbsp green chili finely chopped
    • 1 Tbsp cilantro finely chopped
    • 1 tsp ginger finely shredded
    • ½ tsp lemon juice

    Also, need

    • ¼ cup whole wheat flour for rolling the paratha
    • 3 Tbsp oil for cooking the parathas

    Instructions
     

    • Slice avocado in half, remove the pit and skins and scoop them into a mixing bowl. Then use a fork to gently mash, (avocado should be ripe). Add green chili, salt, asafetida, cumin seeds, lemon juice, cilantro and salt, mash all the ingredients together (Lemon juice is added to prevent oxidizing of the Avocados)
    • Add the whole wheat flour gradually, how much flour you will need depends on the avocado, knead all the ingredients together and make a smooth but firm dough. Do not add any water. Grease your palm and roll the dough between your palms basically you are kneading the dough between you palms. Let the dough sit for 10 minutes before making the parathas.
    • Divide the dough into 6 equal parts and roll them into smooth balls. Flatten them with the palm of your hand and roll them in dry flour. Roll the paratha into about 6-inch diameter. Note: if paratha is sticking while rolling sprinkle little more flour this will help rolling.
    • Heat the flat skillet over medium heat. Note: heavy skillet works best. To check if the skillet is ready, put few drops of water on it. If the water sizzles right away, the skillet is ready.
    • Place the Paratha over the skillet. When you see the color change and the paratha will puff in different places. Turn the paratha over.
    • Paratha should have golden-brown spots. Wait a few seconds and put about 1 teaspoon of oil and spread with a spatula. Flip the paratha and put again half teaspoon of oil. Lightly press the paratha with a spatula.
    • Flip again and press with a spatula making sure the paratha is golden-brown on both sides. Repeat for the remaining parathas.
    • Parathas are best served hot and crispy.

    Notes

    Serve them as a snack with cup of chai, or with a meal I like to serve with Aloo Tamatar and Spinach Raita.

    Ingredients
      

    For Kathi roll

    • 2 uncooked tortilla
    • 2 tsp oil to cook the tortillas
    • About 20 spinach leaves cut into 2-3 pieces
    • ½ cup red bell pepper thinly sliced and remove the seeds
    • 1 cup cabbage thinly sliced
    • ¼ cup carrots shredded
    • ½ cup cucumber thinly sliced
    • 2 Tbsp cilantro leaves finely chopped

    Peanut Sauce

    • ¼ cup peanut butter
    • 2 Tbsp soy sauce
    • 1 Tbsp ginger juice
    • 1 Tbsp sugar
    • 2 Tbsp lime juice
    • 1 Tbsp sesame oil optional
    • 3 whole red chilies

    Instructions
     

    Sauce

    • Remove the seeds from red chili and soak in 2 tablespoons of hot water for few minutes. Blend all the ingredients together except peanut butter, soy sauce, ginger juice, sugar, lime juice, and sesame oil. After spices are blended to paste add peanut butter and blend enough to mix t well. Note: don’t over blend peanut butter will leave the oil.
    • Check if the salt is needed, soy sauce is quite salty.

    Kathi Roll

    • Heat the skillet over medium high, lightly oil the skillet, place the tortilla over skillet for about half a minute, it will change in the color lightly and puff different places. Flip the tortilla over, and lightly brush the oil, flip it again and lightly brush the tortilla. tortilla should have light golden color on both sides.
    • Remove the tortilla from the skillet, make both tortilla same way. And set it aside. You can cook the tortillas in advance.

    Assembling the Frankie

    • Take one tortilla and put it over a flat surface. Spread about 2 tablespoons of peanut sauce over tortilla, leaving 1/2 inch around. Center of the tortilla spread the vegetables moderately, spinach, carrot, bell pepper, cucumber, cabbage, and cilantro. Roll them tightly like burrito.
    • Use extra peanut sauce as a dip.

    Suggestions
    Instead of tortilla you may use left over Roti, Paratha. Serve Peanut Sauce as a dipping sauce with vegetable salad, French fries or with variety of bread.

    Ingredients
      

    For Dough

    • 1 cup whole wheat flour roti ka atta
    • 1 tbsp oil
    • ½ tsp salt
    • cup water to make dough use as needed

    Filling

    • 1 ½ cup sattu, dailya, roasted chana flour
    • 2 tbsp oil
    • 1 ¼ tsp salt
    • ½ tsp cumin seeds jeera
    • 1/8 tsp asafetida hing
    • 1/8 tsp nigella seeds kalonji
    • ½ tsp mango powder amchoor
    • ¼ tsp red chili powder
    • 1 tbsp green chili finely chopped
    • cup water to make crumbly dough use as needed

    Also Need

    • 2 tbsp whole wheat flour to roll the paratha
    • 2 tbsp oil to cook the paratha

    Instructions
     

    Making Dough

    • Mix flour, salt, and oil add water as needed to make a soft dough. Knead dough for about two minutes on a lightly greased surface to make the dough soft, smooth and pliable. Cover the dough and let the dough rest for at least ten minutes.

    Filling

    • Mix all the filling ingredients together, sattu, salt, asafetida, cumin seeds, kalonji, mango powder and green chili, well. Add water as needed to bind all the ingredients together. Use just enough water, it should hold everything together.

    Making Paratha

    • Divide the dough and filling into six equal parts and form into balls. Filling balls will be little bigger than dough.
    • Roll dough into a 3” circle. Place a filling in the center. Pull the edges of the dough to wrap it around the sattu filling. Repeat to make all six balls. Let the filled balls settle three to four minutes.
    • Meanwhile heat a heavy skillet on medium high heat until moderately hot. To test, sprinkle water on the skillet. If the water sizzles right away, the skillet is ready.
    • Press the filled ball lightly on dry whole wheat flour from both sides. Using a rolling pin, roll the balls lightly to make six-inch circles, keeping the sealed side up. If the dough sticks to the rolling pin or rolling surface, lightly dust the parathas with dry flour.
    • Place the paratha on the skillet. When the paratha starts to change color and begins to puff up, flip it over. You will notice some golden-brown spots.
    • After a few seconds, drizzle one teaspoon of oil over the paratha. Flip the paratha again and lightly press the puffed areas with a spatula.
    • Flip again and press with a spatula making sure the paratha is golden-brown from both sides. Repeat for the remaining parathas. Paratha are best served hot and crispy.

    Notes

    Parathas can be kept at room temperature for up to two days wrapped in aluminum foil or in a covered container.  For later use, parathas can be refrigerated three to four days or frozen for up to a month. Re-heat using a skillet or oven.
    Serving Suggestions Parathas can be served with Plain Yogurt, Mango pickle, or with Aloo Tamatar ki Sabji , (Potatoes with spicy tomato gravy) a classic combination.
    What is Sattu
    The difference between  besan and sattu because they both look about the same. The difference being that whereas besan is the flour of raw gram, and sattu is the flour of the roasted gram. Roasting the besan it is not same as the flour of roasted chana. Sattu is also high in protein.

    Dahi Puri is a very commonly found Indian street food! I have been wanting to do this recipe for my channel for quite some time, but I wanted to put my own twist on it. After experimenting with different fillings, I was finally able to come up with a combination that my family approved of – ahealthy and delicious salad style filling.

    Ingredients
      

    • 16 crispy puffed puries golgpa available in India grocery store

    Filling

    • ½ cup yellow moong dal
    • ½ cup potatoes boiled peeled and cut into small pieces
    • ½ cup tomatoes chopped in small pieces
    • ½ cup cucumber chopped in small pieces
    • 1 tbsp green chili finely chopped
    • 1 tsp ginger finely chopped
    • ½ tsp salt
    • ½ tsp roasted cumin seed powder

    For Garnishing

    • 1 cup yogurt whipped
    • ¼ cup tamarind chutney find the recipe on web site
    • 1 tbsp soy sauce
    • ¼ cup boondi
    • 1 tbsp green chili finely chopped

    Instructions
     

    • Spread the puries on microwave safe plate and microwave
      for about 20 seconds, this will make the puries crispier and give the
      freshness. Set aside.
    • Wash moong dal changing water 3-4 times and boil it in
      2 cups of water over low medium heat until dal is very soft and tender but not
      mushy.
    • After dal is at room temperature mix all the filling ingredients together, dal, potatoes, tomatoes, cucumber, green chili, ginger, salt, cumin powder, lemon juice

    Assemble Dahi Puri

    • Whip the yogurt and add the water as needed to make it consistency of thick batter.
    • Mix tamarind sauce and soy sauce together.
    • First make a hole with you thumb center of the golgapa, fill with 1 tablespoon of filling. drizzle with yogurt tamarind chutney, few pieces of green chili, and few boondi, red chili powder and drizzle some more tamarind chutney.

    Notes

    Assemble Dahi Puries just before serving. You can have every thing ready day before.
    Filling also can be served as salad.

    For Chips

    • 2 flour tortillas 8 inch, uncooked

    For The Bean Mix

    • 15 oz can black beans drained and rinsed
    • 1 cup potato boiled peeled and finely diced
    • 1 cup bell pepper finely diced, I am using mix of different colors
    • ½ cup frozen corn thaw and pat dry
    • 1 tbsp jalapeño finely diced
    • 2 tbsp cilantro finely chopped
    • 2 tsp lime juice
    • ½ tsp salt

    For Salsa

    • 2 cup tomatoes chopped
    • ¼ cup cilantro chopped
    • 1 jalapeño chopped
    • ½ tsp salt
    • ½ tsp cumin seed powder

    For Hot Sauce

    • 10 dry whole red chilies
    • ½ cup tomatoes roughly chopped
    • ½ tsp salt
    • ½ tsp cumin seed powder

    For Serving

    • 1 ½ cup lettuce thinly sliced
    • 1 jalapeño thinly sliced
    • ¼ cup shredded Mexican blended cheeses cheddar/Monterey

    Instructions
     

    For Bean Mixture

    • Toss all the ingredients together, beans, potatoes, bell peppers, corn, cilantro, jalapeno, salt, cilantro, and lemon juice , and set aside.

    For Tortilla Chips

    • Cut the tortillas into 1/2-inch square to use as the "papdi". Heat the oil in frying pan oil should be about 1/2-inch-deep, on medium high heat. Fry the tortillas until they are light golden brown.

    For Hot Sauce

    • Boil the chilies in about 1 cup of water, till they are soft and tender. If needed add more water. Blend all the ingredients together, tomatoes, chilies, salt and cumin seed powder.  make it into paste.

    For Salsa

    • Blend all the ingredients tomatoes, cilantro, jalapeno, salt and cumin seeds powder, making into chunky.

    Assembling

    • Spread lettuce in the bowl, put the bean mix over, spread some chips, cheese some taco sauce. I will leave on individual how much they want to add the hot sauce.

    Notes

    The bean mixture can be made two days ahead (just don’t add the taco sauce)
    The taco sauce and hot sauce also can be made two days ahead and refrigerate until needed.
    The fried tortillas can be prepared few days before and kept in an airtight container.

    • 1 tsp oil
    • ½ tsp salt
    • ½ tsp cumin seeds roasted, bhuna jeera

    • 2 tbsp red bell pepper finely chopped

    • Use the flat bottom-heavy frying pan, lightly oil it and heat over medium high heat, put the corn kernels and stir fry for 4-5 minutes stirring continuously. While stir frying kernels will be getting some light and some dark brown color, some of the kernels will pop like you are grilling.
    • Turn off the heat, and add salt, cumin seed powder, cilantro, green chili, red bell pepper, lemon juice, and cream cheese mix it well. Sprinkle feta cheese.
    • Spicy corn taste best when it is served warm but can be served at room temperature.

    • 6 Idlies
    • 1/2 cup potatoes boiled peeled and cut into small pieces
    • 2 Tbsp oil
    • 1/2 tsp salt
    • 1 Tbsp green chili finely chopped
    • 2/3 cup yogurt whipped dahi,curd
    • 3 Tbsp hari cilantro chutney
    • 3 Tbsp tamarind chutney
    • 1/4 cup fine sev

    Instructions
     

    • I am using store bought frozen idlies or you can also use left over idlies. Make sure though frozen idlies to bring to room temperature.
    • Whip the yogurt until smooth. Add a little milk as needed to make the pourable consistency. 
    • Heat 2 tablespoons of oil in a pan and arrange the idle do not overlap them. Cooked the idlis over medium heat, turn them about 3-4 time, till they are light golden brown both sides. This should take about 4 minutes.
    • Transfer them on a plate and stir-fry the potatoes in the same pan sprinkling the 1/4 teaspoon of salt. Stir-fry the potatoes till they start getting light golden color this should take about 2 minutes.  

    Serving the Idli Chaat

    • Arrange the idlies in a serving plate, sprinkle remaining salt ¼ teaspoon. Put ½ the potatoes drizzle the yogurt, cilantro chutney and tamarind chutney. Garnish with green chilies and fine sev.
