Aloo Mattar is a popular north Indian dish. Potatoes and peas with spicy gravy makes a great main dish.

Ingredients
  

  • 3 medium boiled potatoes
  • 3/4 cup green peas I am using frozen
  • 2 tbsp oil
  • 1 tsp cumin seeds jeera
  • 1/8 tsp asafetida hing
  • 1 tsp ginger paste
  • 1 green chili finely chopped
  • 2 tbsp coriander powder dhania
  • 1 tsp fennel seed powder
  • 1/4 tsp turmeric haldi
  • 1 tsp paprika dagi mirch
  • 1 tsp salt
  • 1 tsp mango powder amchoor
  • 1/2 tsp garam masala
  • 2 medium tomatoes sliced
  • 2 tbsp chopped cilantro hara dhania

Instructions
 

  • Peel the potatoes cut them in byte size pieces.
  • In a small bowl mix ginger, green chili, coriander, fennel seed, turmeric, and paprika with ¼ cup of water.
  • Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil. If the cumin seed cracks right away, the oil is ready. Add the cumin seeds, and asafetida, after cumin seeds crack add the spice mix cook until spices start leaving the oil this should take about one minute.
  • Next add green peas and half a cup of water and let it cook until they are tender.
  • Add potatoes and salt mix it well, while mixing mash few pieces of potatoes that will give thickness to gravy.
  • Add about 1-1/4 cups of water after it comes to boil lower the heat to medium and let it cook for about five minutes.
  • Add mango powder, garam masala, chopped cilantro, and slice of tomatoes mix it gently after gravy comes to boil turn off the heat and cover the pot. Tomatoes will cook with the steam.
  • Aloo matter is ready to serve.

Serving Suggestions
Aloo matter can be served with Dal Puri, Urad Dal Kachori, Kuttu Puri and side of Salted Mint Lassi.

    I made curry but it didn’t got its colour ,so I had to add turmeric and garam masala more. Does it affects the taste ? Plz reply…..

  3. Hi Manula! I love this site and have loved everything I have tried. Today, however, I made this and adding 2 cups of water just made it watery and flavorless. I should have put a little in at a time, but when I try something for the first time I like to go by the recipe. How should I fix it? Should I just mix up/fry all the spices again and add it? It tasted really good before I added all the water.

      I checked the recipe I made the mistake in written recipe which I have corrected, transfer the Aloo Mattar in wide pan and cook for few minutes over high heat so water will be evaporated. sorry.

  4. only goes to show how good a vegitarian recepe can be. I only used a little too much water,but other than that,mmm.
    I may never eat outside again! it’s just too good to make it a netflix night at home.

    you are really a great and dedicated cook. I always like the way you cook in steel sauce pan , i also like steel pans. from where did you get this, did you get the set or single piece. Do they stick in the bottom for our indian curries. i am fed up of the nonstick pans. pls let me know where i can find in usa the kind you have. thanks in advance for your response.. namaste.

  8. I made this dish tonight, and it was amazing. I did add mushrooms, garlic, onions, carrots, and cauliflower- I wanted to use up the veggies in my fridge. I added them to the pot of potatoes after they were boiled tender, and allowed the steam to cook the veggies. So amazing. I will definitely make this dish again.

  12. What kind of oil is used in this recipe? I am an American attempting to make Indian food for the first time. An Indian friend of mine cooked a meal for me once-my first time ever having Indian food, and I am hooked! I have to learn to cook it myself! I would soo appreciate your help and I’m very grateful for the recipe although I imagine I may have a hard time finding some of the ingredients. :-/

    Is there alternative to Asafetida (hing) because we don’t use it and its very good that you don’t cook with onions and garlic, but the taste is very good suggest Diwali festival sweet please and thanks for comments.
