    Ingredients
      

    For the Gattes

    • 1 1/4 cups besan (gram flour) (available in Indian grocery stores)
    • 1/2  teaspoon chili powder adjust to taste
    • 1/2  teaspoon salt
    • 1/8 teaspoon turmeric (haldi)
    • 3 tablespoons yogurt (dahi)
    • 3 tablespoons oil

    For the kadhi

    • 1 cup yogurt (dahi)
    • 1 tablespoon besan (gram flour)
    • 1/4 teaspoon turmeric powder (haldi)
    • 1/4  teaspoon chili powder adjust to taste
    • 1 tablespoon coriander powder (dhania)
    • 1 teaspoon salt adjust to taste
    • 2 tablespoons oil
    • 1 teaspoon cumin seeds (jeera)
    • 1/2  teaspoon mustard seeds (rai)
    • 1/8 teaspoon asafetida (hing)
    • 4 whole red chilies
    • 1 bay leaf (tejpat)
    • 1 black cardamom optional
    • 1/2  teaspoon paprika (dagi mirch)

    For Garnish

    • 2 tablespoons chopped cilantro

    Instructions
     

    For Gattes

    • Mix all the ingredients in a mixing bowl and gather into a soft dough, adding a little water if needed.  At this point the dough will be a bit sticky; wetting your fingers with oil or water will help. 
    • Divide the dough into four or five parts. Roll each one between your palms into a long, smooth log, approx. five” in length and ¾” in diameter. You will need to oil your palms to prevent the dough from sticking.
    • Bring three cups of water to a boil in a pot.  Gently drop the gatte logs into the boiling water and cook for four to five minutes, or until they begin to float up to the surface.
    • Remove the cooked Gatte logs from the water and let them cool.
    • Slice the logs into approx. ¾ inch pieces. Set the Gatte aside.

    For The Kadhi

    • Mix yogurt and gram flour into a smooth paste. Add turmeric, chili powder, and coriander powder to the yogurt paste.
    • Pour the oil into a saucepan over medium heat. Test the heat by adding one cumin seed to the oil. If the cumin seed cracks immediately, the oil is ready. Add the cumin seeds, mustard seeds, and asafetida.
    • When seeds crack add the whole red chilies, bay leaf, cardamom, and paprika. Stir for a few seconds.
    • Pour in the yogurt paste and stir for two minutes. Add three cups of water and stir until the gravy comes to a boil. Add salt to taste.
    • Add the gatte to the gravy. Cover and cook over low-to-medium heat for 20 minutes or longer. Turn off the heat.
    • Add cilantro and cover the pot for a few more minutes.
    • Now you are ready to serve!

    • 3 cups puffed rice (murmura, kurmura) available in Indian grocery stores.
    • 1 cup fine sav (vermicelli-like snack made from gram flour) available in Indian grocery stores.
    • 1 cup  papdi broken in small pieces (recipe you can find on my web site) or available in Indian grocery stores.
    • 1/2  cup of chopped boiled potatoes
    • 1/2  cup of chopped cucumber
    • 1/2  cup of chopped tomatoes remove the seeds
    • 2 tablespoons chopped cilantro
    • 1/2 teaspoon salt (adjust to taste)
    • 4 tablespoon of hari cilantro chutney
    • 4 tablespoon of tamarind chutney
    • 1 tablespoon minced green pepper optional

    For Garnish

    • 1/4  cup fine sav
    • 2 tablespoons lemon juice

    Instructions
     

    Method

    • In frying pan over medium heat dry roast the puffed rice for 3 to 4 minutes. Let it cool.
    • Combine the dry ingredients (puffed rice, sev, papdi,and salt) together and mix well. Set aside until ready to serve
    • Mix chopped potatoes, cucumber, tomatoes, cilantro,and minced green pepper if you like it hot, and set aside.
    • When ready to serve, combine the dry ingredients and potato mixture.
    • Add hari cilantro and tamarind chutneys to your taste, making sure the chutneys coat the bhel puri. Garnish with sev and drizzle with lemon juice to taste.

    Instructions
     

    To Make Dough

    • Add the flour, salt, and oil to a bowl and mix it well.
    • Add the chilled water slowly, mixing with your fingers as you pour the water. Do not knead the dough. The dough should be very soft but not sticking to fingers. Cover the dough and let it sit for at least fifteen minutes.

    To Make Filling

    • Heat the oil in a frying pan, add green peas, stir-fry until peas are tender.
    • Add ginger, coriander powder, fennel seed powder, chili powder, mango powder and salt, stir fry for another few minutes.
    • While stir frying the peas mash them with spatula.
    • Let the filling cool to room temperature.

    To Make Kachoris

    • Take the dough and lightly knead it. Divide the dough in twelve equal parts.
    • Take one part of the dough and with your fingers flatten the edges and make it into about a 2-inch circle. Leaving the center, a little thicker than the edges around. Mold the dough into a cup and place about 1 teaspoon of filling in the center. Pull the edges of the dough to wrap the filling. Proceed to make all 12 balls.
    • Let the filled balls sit for 3 to 4 minutes before pressing.
    • Set the filled balls on a clean and dry surface with the seam facing up. Using the base of your palm, slowly flatten them into about 3 inches circle.
    • Heat about 1-1/2 inches of oil in a frying pan on medium heat. To check if the oil is ready put a little piece of dough in the oil. It should sizzle, and come up very slowly.
    • Do not overcrowd the kachoris in a frying pan, fry them on medium heat. After they are puffed, slowly turn them over.
    • It will take about 3 minutes to fry from each side. Fry until golden-brown on both sides.
    • If the kachoris are fried on high heat, they will get soft and will not be crispy.

    • 4 medium potatoes
    • 2 tbsp oil canola, vegetable
    • 1 tsp cumin seeds jeera
    • 1/8 tsp asafetida hing

    • 6 whole red chilies
    • 1/4 cup yogurt dahai, curd
    • 1 tbsp sesame seeds
    • 1 tbsp coconut powder
    • 1/4 inch ginger adrak
    • 1 green chili
    • 1 tbsp coriander powder dhania
    • 1 tbsp fennel seed powder saunf
    • 1/2 tsp turmeric haldi
    • 1/2 tsp red chili powder
    • 1 tsp salt
    • 1/2 tsp garam masala
    • 2 tbsp cilantro finely chopped hara dhania

    Oil to Fry

    Instructions
     

    • Peel and cut the potatoes into ½” cubes.
    • Heat the oil in a frying pan over medium high heat.
    • Frying pan should have at least 1 inch of oil. To check if the oil is ready, put one piece of potato in the oil. The potato should sizzle right away. If potatoes are fried on low heat, they will be very oily.
    • Fry the potatoes till they are cooked through; turn the potatoes a few times while frying. Take out potatoes with a slotted spoon (this allows excess oil to drip back into the frying pan) and place on a paper towel. Keep it aside.
    • Heat the pan on medium heat and stir-fry the sesame seeds for about a minute until seeds lightly change color. Take them out and keep aside.
    • Blend sesame seeds, coconut, ginger, green chili, and make it into a paste. Use water as needed to blend into paste.
    • In a small bowl mix, sesame paste, yogurt, ginger, green chili, coriander powder, funnels seed powder, paprika, red chili powder, and turmeric into a paste. Keep it aside.
    • Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready. Add the cumin asafetida and cumin seeds. After the cumin seeds crack, add whole red chili and besan (gram flour). Stir-fry for about half a minute until the besan (gram flour) is golden-brown.
    • Add the spice paste and stir-fry for about 2 minutes on medium heat until the spices start to separate from the oil.
    • Add the potatoes, mix it well and add about 1cup of water. After the gravy boils, let it cook on low-medium heat for 8 to 10 minutes. Adjust the gravy to your liking.
    • Add the cilantro and garam masala, cover the pan, and turn off the heat. Let it sit for a few minutes before taking off the cover. This helps bring the color to the top of the dish.

    • 1 tbsp olive oil

    Instructions
     

    • Mix all the salad dressing ingredients together. Set aside.
    • Cook the sprouts with salt and ¼ cup water in a saucepan. Bring it to a boil and cook two minutes. Cover the pan for three to four minutes. Drain off any liquid.
    • Let the sprouts cool to room temperature and add the dressing.
    • In a serving dish arrange tomatoes, cucumber, and oranges. Top with the spiced sprouts.
    • Garnish with cilantro and green chili.

    Notes

    How to make sprouts
    Soak the whole moong ten to twelve hours in four parts water. (Soaking will double the volume of the moong).
    Line a colander from the moong and loosely wrap the beans in the muslin cloth.  Store the soaked beans in a warm dark place for a day or two (a closed, unheated oven, for example, or on the countertop covered with a heavy cloth) until sprouted.
    Suggestions
    Sprouts can be refrigerated for four to five days.
    Sprouts salad makes a good lunch to take to the office or school.

    For Preparing Pasta:

    • 2 tbsp olive oil
    • 1 tbsp chopped basil
    • 1 tsp chili flakes

    Instructions
     

    Cooking Pasta

    • In a large pot boil the water with salt and oil. After water comes to the boil add the pasta.
    • Cook the pasta until it is just tender, not too soft. Drain the water and set pasta aside.

    making Vegetables:

    • Heat the oil in a frying pan over medium high heat.
    • Add vegetables (carrot, green beans, bell pepper, mushrooms, and zucchini) to skillet and sauté until they are nearly tender.

    Marinara Sauce

    • Mix the cornstarch in ¼ cup of water and keep aside.
    • Heat the olive oil in a saucepan and add the basil, Italian herbs, and chili flakes stir and add tomatoes.
    • Let the tomatoes cook until they become pasty.
    • Next add cornstarch, salt and sugar to the tomato sauce, cornstarch will give thickness to the sauce.
    • Next add the sauté vegetables to the sauce and cook for few minutes on medium heat until sauce come to the desirable thickness.

    Prepare The Pasta

    • Heat the oil in a saucepan and add basil and chili flakes stir for few seconds.
    • Next add the drained pasta and sauté for a minute until pasta is well coated with oil.
    • Pour the vegetable sauce over the pasta, serve hot with slice of French bread and salad.

    Notes

    Variations:
    For this recipe you need about 5 cups of vegetable, replace the vegetables to your choice.
    Serving suggestion:
    Serve pasta with slice of toasted bread and green salad.
    Additional Notes:
    I like to serve pasta with slice toasted and spiced French bread. Before toasting the bread spread the olive oil and sprinkle basil, chili flakes and salt.

    • 1/2 gallon equal to 8 cups milk
    • 1/4 cup lemon juice
    • 1/2 cup sugar
    • 1/4 tsp cardamom ground

    Garnishing

    • 2 tbsp sliced pistachios
    • 8 strands of saffron
    • 2 tbsp crushed pineapple

    Instructions
     

    • Make the paneer (check the recipe for paneer).
    • Drain the whey using a strainer line with cheesecloth, or muslin cloth. Wrap the curds in a muslin cloth, rinse under cold water, and squeeze well.
    • Once the paneer is drained, place on a dry, clean surface and knead the paneer until the paneer is almost rolls into smooth soft dough.
    • Add the sugar and cardamom into the paneer and knead the paneer again until sugar is mixed well.
    • Next on low heat cook the paneer mixture stirring continuously until paneer starts coming together as soft dough. This should take about 6 to 7 minutes.
    • Turn off the heat and keep mixing the paneer like you are making dough. This is most important step to this dish; you are just cooking paneer enough to take out the rawness. If you over cook the paneer it will become crumbly.
    • Mix the saffron thread in 1 teaspoon of warm milk and mix it well. Keep aside.
    • Divide the paneer in 24 equal parts and roll them giving a ball shape.
    • Garnish with crushed pineapple, or garnish them with a drop of saffron paste putting sliced pistachio over.
    • Refrigerate them for few hours before serving. Serve them chilled!

    Notes
    Important step to this dish; you are just cooking paneer enough to take out the rawness. If you over cook the paneer it will become crumbly.
    Sandesh can be refrigerated for a week.

    • ¼ cup rice flour

    Also needed:

    • 1 cup Water as needed
    • Oil to fry

    Instructions
     

    • In a frying pan roast the dry peanuts on medium heat for 3-4 minutes and let it cool for few minutes.
    • Mix all the ingredients together in a large bowl.
    • Add water as needed making sure the spices and flour stick to the peanuts uniformly.
    • Heat the oil in a frying pan on medium heat.
    • The frying pan should have at least 1 inch of oil. To check if the oil is ready, put one drop of batter in the oil. The batter should raise to the top but not change color right away.
    • put few drops of oil in your hand it helps droping the penuts before putting peanuts on the oil.
    • While putting the peanuts into oil, loosen them with your fingers to make sure the peanuts are separated and do not form lumps. Peanuts should be separated while frying.
    • Fry the peanuts until they turn light brown, turning them occasionally.
    • When they are done cooking, take them out of the oil with a slotted spoon. Place them on a paper towel to absorb the extra oil.
    • After cooling to room temperature, the peanuts should be crispy.

    • Masala Peanuts can be stored for a month in an airtight container.

    • Heat the 1 tablespoon of oil in a pan. Test the heat by adding one cumin seed to the oil; if seed cracks right away oil is ready.
    • Add cumin seeds and asafetida after seeds crack add the spice mixture and stir-fry for a minute until you see the oil start to separate from the spice mixture.
    • Add chopped tomatoes stir-fry for a minute.
    • Add fried potatoes and eggplant mix it gently, let it simmer for three to four minute on medium low heat.
    • Subji should be not very dry if needed add three to four spoons of water.
    • Turn off the heat and add chopped cilantro mix it well.
    • Left over makes great sandwiches

    Ingredients
      

    for Papdi:

    • 1 cup all purpose flour maida or plain flour
    • ¼ cup semolina flour sooji
    • 2 Tbsp oil
    • ½ tsp salt
    • cup lukewarm water Approximately, use as needed

    To garnish the papdi:

    • 1 small boiled potato peeled and sliced into thin rounds (about the thickness of a quarter or 1/16″)
    • ¼ cup boiled or canned chickpeas rinsed and drained
    • 1 cup plain yogurt
    • ½ tsp salt Approximately
    • ½ tsp roasted cumin seed powder bhuna jeera
    • ¼ tsp red chili powder
    • 2 Tbsp hari cilantro chutney
    • 2 Tbsp tamarind chutney

    Instructions
     

    Making Papdi:

    • Mix the flour, sooji, salt, and oil in a bowl. Add water to the mixture a little at a time, kneading to form firm dough.
    • Cover the dough and set aside for 15 minutes or more.
    • Divide the dough into about 3 equal parts.
    • Roll one section of the dough to eight inches in diameter, fairly thin ­– about thickness of dime. Do the same with the remaining two parts.
    • Prick the rolled dough firmly every quarter-inch or so with a fork to keep the papdi from puffing while frying. Using a sharp knife, cut the rolls into 1½-inch squares.
    • Heat the oil in about one inch of oil in a frying pan over medium heat. To test, drop a small piece of dough in the oil. The dough should sizzle but come up to the surface slowly. If the dough rises
    • immediately, let the oil cool slightly and try again.
    • Place just enough papdi to cover the oil in the frying pan in a single layer. Don’t crowd them.
    • Fry the papdi until both sides are a light golden brown.
    • Remove cooked papdi with a slotted or mesh spoon and transfer to a plate. Continue cooking the remaining papdi in batches.
    • After the papdi cool to room temperature they should be crisp.
    • Papdi can be stored in airtight container for 1 month.

    Making the Garnish

    • Mash the chickpeas lightly and mix with hari (cilantro) chutney to your taste. Keep aside.
    • Put the yogurt into a bowl and whisk until smooth. Add a little milk as needed to consistency of pancake batter. Add salt to taste. Set aside
    • Arrange the papdi on a large plate.
    • Place a slice of potato on top of each papdi (does not need to be the exact size). Place ½ teaspoon of the chickpea mixture over each potatoa slice.
    • Drizzle yogurt over each papdi.
    • Sprinkle roasted cumin powder, and red chili to your taste.
    • Finish the papdi chat by drizzling with tamarind chutney.

    Notes

    To make round papdi, divide the dough in about 30 equal parts and roll them individually into 2½-inch rounds. Prick with a fork in four to five places.

    Ingredients
      

    • 1-1/2 cupa besan gram flour
    • 2 tbsp fine sooji samolina
    • 1/2 cup unsalted melted butter ghee
    • 3/4 cup sugar
    • 4 tbsp sliced almonds badam
    • 1/4 tsp coarsely grounded cardamom seeds ilachi

    For Garnishing

    • 1 tbsp unsalted melted butter ghee
    • 1 tbsp sliced pistachios

    Instructions
     

    • Put the besan (gram flour), sooji, and melted butter in a large frying pan and mix.
    • Turn the stove on to medium heat and begin to roast the basen mixture until basen becomes light golden brown in color. Stir the mixture continuously with a spatula to prevent burning. Cooking on high heat will not allow the mixture to fully cook.
    • When the color has changed you will also start to smell the sweetness of roasted besan. This should take about 7 to 10 minutes. Remove the pan from the heat and let the basen cool to a warm temperature. don’t let it become to room temperature.
    • While the mixture is warm add and mix cardamom seeds, almonds, and sugar.
    • To make the ladoos, take about 2 tablespoons of warm basen mixture into your palm. Gently press the mixture between your palms to form a smooth, round ball. The ladoos are usually about the size of a ping-pong ball, but you can adjust the as you prefer.
    • When you have finished making all of the ladoos, take one ladoo at a time and dip the ladoo a quarter inch into melted butter or ghee. Then lightly touch the part of the ladoo with the butter into the sliced pistachios just enough so some pistachios stick to the ladoo.
    • Put ladoos back on the plate with the pistachio side facing the top.
    • Leave the ladoos on a plate to cool to room temperature before putting into a covered container. The ladoos can be stored in an airtight container for 2 to 3 weeks.
